As lovers of the outdoors, we always knew we wanted to create a home that brought the outside in. A year after getting the keys to our first home, things are starting to take shape. Our little cottage on the edge of the Peak District has become our pocket of calm. Somewhere we can switch off, rest up with a good coffee and plan our next adventure. Having trained in architecture, I’ve always been fascinated by biophilic design and how we can create environments built around nature. So here’s a few ways we’ve brought the outdoors into our home. Lots more in the pipeline for next year. Not quite ready for the chaos and dust to return just yet. #outdoorliving #biophilicdesign #natureindesign

A flying visit to the lakes for sunset and a few decent coffee spots. Love to see the boys @hiked.up doing their thing for @thenorthfaceuk @ellisbrigham . Made a lot of good mates since the first hike together and Friday night was up there with one of the best.

HEREFORD RIBEYE with Wye Valley asparagus & radishes [AD] Far be it from me to discourage anyone from a proper pile of chips alongside their steak, that is a joy in itself. But when spring is at its height and British asparagus and radishes are nudging their way into the shops, this feels like the more honest choice. Crisp, fresh, and alive with the season. I cooked this on a trip to @uniquehideaways Mrs. Higgs’ cottage in Herefordshire, a county with a deep and quiet pride in its beef. The bone-in ribeye came from a farm half a mile down the road from where we were staying, the asparagus from the Wye Valley just beyond. There’s something deeply satisfying about a lunch that comes together like that. This is a dish for a slow afternoon, good company, and no particular rush. This works equally well with other thick cuts of beef, the key is choosing something generous enough to reward a slow and attentive cook. Reflecting on a very memorable weekend. Blinked and we were in May. Days pass so fast at the moment without a conscious effort to take a bit of time out to go get lost in the mountains. Disclaimer: We obviously didn’t actually aim to get lost. We were responsible and took a map. Though @tomsparrowoutdoors did try his best to trick me into a few extra steps. I’m heading back to the lakes next weekend for Keswick Mountain Festival. Another wild camp is on the cards. It’s got a lot to live up to after this one.

April has been one of those months where things have really sprung to life. It’s been pretty hectic at times but when I look back on some of the moments that it held, it fills me with a lot joy alongside the tired eyes. - Travelled across the UK working on a few very fun projects - Had friends from our travels in South America come to visit and took them to all our favourite places like @poolbridgefarm and @anellopizzeria - Spent a weekend down in Norfolk catching up with family and staying in a pretty epic spot @fy.camp - Plotting and scheming @field.blends and chatting all things outdoor cooking with @living_north -Went to watch @laura_field97 compete with Otto -Took the coffee morning riverside All alongside remembering we’ve still got this massive hole in the garden. Progress is being made one step at a time on that. We are almost set to get shifting to the exciting parts of that project. More to follow…

A while back I’d picked up this skewer from a Rodizio restaurant that was closing down. I’d never found the right opportunity to use it until the other week when I had a lovely piece of Picanha waiting to be eaten and evening which called for some relaxation by the fire. Lines have been tight lately and the smoker has had a steady supply of Trout. Nothing quite beats a golden morning in the water, other than the taste of a days catch on the table. A really gorgeous hot smoked trout recipe inspired by a recipe I’d seen in @juliusroberts book. Served with some potato latkes and a herby salad. AD The past couple of years have taught me a lot about how I view adventure in the UK. In fact, some of my most memorable trips have happened just a couple of hours away from home. Since I bought my @tentbox when we got back from travelling, it’s become a base camp for exploration up and down the country. It’s amazing what a long weekend outside, spending time with mates can do to help declutter my mind and step away from a screen. Longer days are back. There’s some stunning views to be seen. You’ll find me pitched up and ready all summer long.

Last weekend I headed down to Norfolk to spend time with family and unwind by the fire. It came after a busy few weeks of work and travel, working on some exciting projects and meeting a lot of new faces. I spent a bit of time reflecting whilst cooking in the evening sun and thought I’d share a few of my thoughts… It really is a special way to pass the time.
