Nepalese jhol (and accidental jhal 🌶️) momo
For the jhol
- toast sesame seeds and peanuts. Later transfer to a blender.
- to a pan add oil, a tbsp of cumin seeds, a tsp of pepper corns, 2 roughly chopped tomatoes, 1 roughly chopped onion, 9-10 cloves of garlic (❤️), 4-5 dried red chillies (these are to be soaked in warm water for 10 minutes beforehand), stem of coriander, red chilli powder (I added gochujang), turmeric powder and salt. Cook for a few minutes till the tomatoes soften. Add this to the blender. Blend for a few minutes till you get a paste like consistency.
Transfer the paste to a pan and add water. Bring to a boil and drizzle lemon juice.
For the plating
To a bowl, add homemade chicken momo, a generous portion of the jhal jhol (spicy curry 😂). Lastly, garnish with some chilli oil and fresh coriander leaves.

2500 reels later, my esurient creativity finally landed on bruschetta 🤷🏻♀️
Chopped tomatoes, roughly sliced basil leaves, coarse sea salt, plenty of roughly chopped garlic (I like to go overboard with this), extra virgin olive oil, balsamic vinegar and pepper powder. All mixed together in a bowl.
Spoon this onto rustic toasted slices of baguette.
Pro tip - for extra flavour, rub a clove of garlic on the toasted bread before adding the mix

They’re calling them umbrella dumplings 🤷🏻♀️. Paired with a sweet and spicy soy-ginger sauce, they make the perfect comfort food.
Wonton wrappers by Happy Belly are by far the best I’ve used.
Also, do not use a flat pan to steam the dumplings, not sure what I was thinking... always use a fry pan.
Method:
1. Place small portions of the filling on a greased pan
2. Cover each ball with a wonton wrapper
3. Drizzle some water and a tsp of sesame oil
4. Cover with a lid and let it cook on low heat
5. If the wrappers dry up midway, sprinkle some more water
6. After a few minutes, once the chicken is cooked, turn the flam to high and let it crisp up a little
7. Transfer to a plate and drizzle a generous amount if homemade sauce
