Tucked within 100 acres of Boulder Open Space and Mountain Parks (OSMP) land in the Boulder Valley, Esoterra Culinary Garden stands out as a model of agricultural diversity and ecological stewardship. Spread across just under 4 acres of permanent, no-till, biointensive vegetable beds—surrounded by an additional 3 acres of thoughtfully managed perennial plantings—this small but dynamic farm grows more than 300 different species of edible plants, including leaves, shoots, roots, and fruits.
Esoterra’s farming philosophy centers on soil health, biodiversity, and a regenerative relationship with the land. Their meticulous methods yield exceptionally flavorful and nutrient-dense produce, sought after by many of the region’s top chefs. Through longstanding partnerships with about 50 restaurants, the farm supplies a year-round array of vibrant ingredients, many of which are rare or culturally significant varieties selected for flavor and nutrient quality.
The garden embraces a whole-plant approach to food and agriculture, aiming to help reconnect people to the origins of their meals and the ecosystems that support them. By growing unique varieties from around the world and sourcing seeds from breeders and keepers committed to preserving culinary and nutritional value, Esoterra is helping to reshape the local food culture in Colorado.
Looking ahead, the farm continues to innovate, experimenting with new crops each year while remaining deeply rooted in its values of abundance, connection, and ecological responsibility.
