Settled in the Paleozoic Sausal mountains of Styria, mavericks Karl and Eva Schnabel have been farming 5 ha. of ever-pristine, panoramic vineyards biodynamically for over 20 years, autonomously, rigorously and righteously, sincerely and sensibly.
Genuinely interesting and essential to emphasize is the regional contrast in which their vines are grown, foremost defined by the fundamental presence of cherished Celtic cattle, which form a crucial link in the farm’s holism and are iconically illustrated on the labels.
With the rational conviction that “no preparation can substitute the cow,” the animals directly fertilize the vineyard soils, which, unlike the Opok terroirs around Leutschach, rest on slaty, elementary silicium-rich rock, as the Sausal range was never a former seabed.
From these vertiginous, lively vineyards, herbs such as stinging nettle, horsetail and yarrow are gathered for biodynamic infusions to foster vine resilience. With a scythe, Karl mows only manually beneath the vines. In favor of biodiversity, vegetation around them grows freely, while soil compaction is avoided and microbial life preserved by eschewing the use of machinery.
Before reviving their inherited farm in the late 1990s, oenological exploration in Burgundy sparked their love for Pinot Noir. Consequently, and contrary to Styrian tradition, Karl and Eva chose to focus primarily on Zweigelt, Blaufränkisch and Pinot Noir, alongside Morillon, Riesling and Sauvignon.
🍷 With vivacious youthful fraîcheur and gracious finesse, the pure, politely pronounced, aristocratic, ambrosial bouquet charms with delicate, slightly earthy fragrances of sour red cherry, raspberry, pomegranate, cranberry-bread and violet/hibiscus stems.
On the palate: dry, body: Medium-. With succulent souplesse, lively, rounding acidity is neatly balanced with silky tannins and fluent flavors blueberry cream, strawberry & red cherry that with a pinch of pepper and finely bitter black plum skins and citrus peel fade in clean, lengthy, slightly drying, herby and stony finish ending with a tiny toasty touch of plum-pie crust.
