Back in the dough zone thanks to @eatcoyotas Most folks know us for our grain-free tortilla, but the soul of Coyotas comes from Hermosillo, Sonora — cradle of the wheat flour tortilla. Founder Janet Flores @janflopav brought the whole team home and arranged a visit with one of the masters. Guadalupe at Doña Guille gave us a full masterclass in the granddaddy 30-inch “tortilla de agua” aka “sobaquera.” Hard to express how generous she was with her knowledge — but like most bakers, she knows the only “secret” is practice and caring. I felt like a mess, but Guadalupe told me I was a vaquero — traditionally the only men who make tortillas are cowboys. I’ll take it! Fit for print!! 🗞️ So proud of this film and the modest success it’s having on the festival circuit. Grateful to my local paper, The La Jolla Light and writers @noah32lyons and @pam_kragen for shining a light on the project and the local boy who directed it. The camera always points two ways — at the subject (hey there @lisadahlsedona !😽) and right back at the person behind it. It wasn’t until someone approached me after a screening to share her own story of losing her brother that I realized how much I was built to tell Lisa’s ❤️‍🩹 You’ll find the film trailer in my IG feed and the whole article at the link in my bio. Full 25 minute film isn’t public yet, but I’ll keep you posted.

We’ve been cooking the same “Southwestern Thanksgiving” from the November ’83 Gourmet since forever, and this year I grew the chayote for one of the sides. Very proud of the big bucket haul, but this gardener’s real flex is that cool dude farmhand 💚

Wednesday fish stew served with a hearty belated HAPPY PUB DAY to the Blue Food Cookbook by Barton Seaver and Andrew Zimmern! 💙🎣 Congratulations and huge thanks to the whole team behind this massive effort, along with my deepest gratitude to friend and “sister in the fishy business” @jen_bushman who dreamed of this book for years and whose tireless efforts behind the scenes brought it to life. So much more to say and share, but for now I’m just here to vouch for the recipes (ya’ll know I taste everything I shoot) and the writing. @bartonseaver brought as much fire and wisdom to the manuscript as he brought fennel to the recipes (which is to say, a lot) while @chefaz kept it real and down to earth with some killer renditions of the classics (run don’t walk for his papillote with saffron, friends!).

For the last few years I’ve been working behind the scenes as the photographer and creative director for a rad not-so-little-anymore tortilla company in San Diego @eatcoyotas founded by my old friend @janetflorespavlovich . In a case where nearly all of my interests collide, I stepped out from behind the camera to put our compostable packaging to the test in my compost heap. Nerd alert! 🤓🪱
