Preserved Lemons bring a new dimension to a classic profile.
The fruit has spent time in salt and their own juices, drawing out the moisture and adding a briny characteristic that screams out to be utilised in a martini format.
So we’ve done just that.

Cooked agave has a distinctly enticing and comforting profile, full of honey and richness. We look to celebrate this with the addition of pear and almond. Then the Oaxacan rum adds structure and body, giving this drink its power.

This drink is all about texture. That’s why we use strawberry yoghurt to fat wash single malt scotch, amaro, sweet vermouth, crème de mûre (all in equal parts), to create a rich and umptious texture.

Two iconic classics that both celebrate the unsung hero that is Orange Liqueur, come together in our Daisy Fizz. We use a homemade Orange and Cardamom Shrub to add layer of complexity and depth to the serve.
