š½ Working on my business DOES mean working in my business. š„
Writing bespoke training for hospitality has been my dream for a while and Iām finally doing it with 700 Solutions Ltd, BUT that doesnāt mean I can step away from the front line, and nor would I want to.
Serving people is in my blood and going from developing teams and working with amazing mentors daily to lone working was a really hard transition. I realised if I wanted to continue down the self-employed route I needed to keep surrounding myself with people that inspire me to create and train.
I develop training sessions and offer training tools from hands-on experiences in the industry we work in NOW.
Right now. And Iām so proud of that.
ā I donāt preach outdated learning techniques
ā I donāt pretend the industry is the same as it was 4 years ago or even last year for that matter
ā I donāt believe in the āwhat people donāt know wonāt hurt themā bollocks
ā I donāt believe the guest is always right
ā I do believe you can only give tools to a team once youāve experienced the problem
ā I do believe feedback is KING for growth
ā I do believe in sincere and candid honesty
ā I do believe the guest can be right, but mainly in matters of taste..... š
So, if you see me in a bar or restaurant near you, donning an earpiece, apron or chef whites - be assured thereās a hell of a training pack on the way š¤£
This week grounded me in ways I didnāt expect.
After finding out a close friend has only weeks to live, I put down my tools, stepped away from work, and travelled to Scotland.
At first, I felt overwhelmed. Like I couldnāt possibly stop.
Then I realised:
I can.
I must.
I should.
Being freelance should mean freedom, not just flexibility, but the freedom to choose what truly matters when it matters most.
What I experienced was unforgettable.
I saw my friend in a beautiful place, surrounded by beautiful people, living a beautiful life, exactly where he wants to be.
And that changed something in me.
It reminded me to stop believing I always need more.
More work.
More money.
More success.
More someday.
Because the greatest lesson I learned is that he already had enough.
Enough courage to build the life he wanted.
Enough clarity to choose where he wanted to be.
Enough intention to make it happen.
So many people leave this world in places they never truly wanted to be.
He wonāt.
He created the life and place he wanted, and that is a rare kind of success.
This week reminded me that time is our most valuable resource, and sometimes the real goal isnāt having more.
Itās realising when you already have enough.

It turned out to be more of a challenge than expected (partly because I misunderstood Lent and accidentally added a few extra days in there š), but a really worthwhile experience overall.
One thing that really stood out over the 44 days was just how far the non-alcoholic space has come.
What used to feel like a compromise now feels like a genuine choice.

And news flashā¦.the best non alcoholic cocktails I had, tasted the same, and involved the same precision, time and effort - so all the complainers on āmocktail pricingā, operators and guests - be better!!
Iād pay the same for a non-alcoholic tommys !!! Take my money (Shiko Group - your non alcs were LUSH! I got my Tommys)
Anywayā¦.
That shift matters, especially when you look at Gen Z. Theyāre drinking less, drinking later, and being far more intentional about it.
Socialising isnāt disappearing, itās evolving.
For hospitality, thatās not a threat, itās an opportunity.
A strong non-alcoholic offering isnāt just about inclusivity, itās commercial.
Better options keep people in venues longer, increase spend per head, and open the door to a much broader audience.
Safe to say though⦠the first hangover back was a reminder of the alternative.

Itās been a challenging 44 days⦠especially considering I got Lent so wrong š
Didnāt realise it was actually 40 days (massive revelation š¤Æ), also apparently Sundays donāt count?! Who knew. But honestly, glad I didnāt take them off.
Which means I actually finished on Palm Sunday⦠so ended up doing an extra 4 days (soz @danieljalonso š )
Itās safe to say the hangover was brutal⦠Iām talking 2 KFCs brutal šš and still lingering š«
Thereās definitely a lot to be said for non-alcs!

And yet⦠I remain sober.
Still in pubs.
Still in bars.
Still in restaurants
And do you know what, some of the non-alcoholic cocktails have been unreal. Turns out bartenders take it as a personal challenge when you say āsurprise me, but no alcohol.ā
I must admit, this weekend was REALLY hard, Iām actually dreading the next 3.5 weeksā¦. š³.
BUT
