Ginger-scallion steamed fish I first had this flavour combination 3 years ago at a local Chinese restaurant and to this day I haven't forgotten it. I decided to try my hand at it last night with a @rainforestcaribbean snapper fillet and it was a 10/10. Super quick and easy (though my makeshift steaming set-up was hilarious) #seafood #foodblog #ebybitecounts #easyrecipes #weeknightdinner

Today's breakfast: Patacón with shrimp, avocado, and hogao. I tried hogao for the first time on a recent trip to Medellín and instantly fell in love. My version here is missing quite a few ingredients 🫣 but it still made a great bite. #patacon #hogao #comidacolombiana #foodies

Okay, so at 12.900 COP / 492 JMD per cookie (never mind the cost of a deluxe cookie), I'll admit that Braun is a little pricey. But I'm always willing to pay top dollar to satisfy my sweet tooth! The cookies have a lovely bite: that initial crunch makes way to a soft (but fully baked! 👀) interior. This 'Queen Pistachio' cookie was filled with a delectable Pistachio cream. I also tried a new addition, the Kinderella, which featured a hazelnut and chocolate filling. Both delicious, both 100% #worthit #foodblog #braun #sweettooth #cookie #foodreview

I served raw brownies at Galentine's, and it was mortifying. As a novice baker (I prefer stove top cookery), here are the 3 most fatal mistakes I made: 1. Undermixed batter As you can see from my previous video, the first pour was extremely lumpy. I took "beat for one minute" too lightly and failed to completely dissolve the sugar into the butter. My second batch turned out much smoother and shinier once I rectified this. 2. Wrong dry/wet ratio Turns out marshmallows are a wet ingredient 😬. Who knew? Without accounting for that, the ratio of dry to wet ingredients was slightly off. The result was deliciously gooey brownies that had very little structure – I could only pick them up once the batch was cooled and refrigerated. Next time, I think I'll add a bit more flour. 3. Oven was off 🤦🏿‍♀️ Sounds ridiculous, but it's true! I moved into a new place and had very little experience with this oven. It was my first dessert here. I DID, in fact, turn the oven on, but for whatever reason, it had turned itself off by the end of the bake. Needless to say, it's probably a good idea to figure out the quirks of your oven before offering to make a sweet treat for any gathering. What other tips and tricks would you like to share? #foodblog #brownie #homebaker #fail #homecooking #girlsnight #chocolate #raw

Fudgy, Chocolatey Valentine's Brownies I made heaps of mistakes with these, which of course means I learned a bunch. Luckily, brownies are super forgiving. The first bax was fixed by a quick toast in a very hot oven. The second batch turned out pretty well. Still need to tweak this recipe though... #galentinesday #valentines #brownielovers #brownie #foodies

Still dreaming about this fried fish meal from a trip to Playa Blanca last year. The features a raw veg salad, patacon (pressed plantain 🇯🇲), coconut rice, and fried 'Mojarra'. It also came with a cup of drink. Fun(?) fact: Mojarra, as advertised here, is actually tilapia. I'm not sure what got lost in translation. The meal was the highlight of a day trip package that included transportation to and from (Playa Blanca to Getsemani) and access to the beach for only 40,000 COP. Playa Blanca was gorgeous but packed with people. The trick to finding the best beaches in Cartagena is actually to leave mainland Cartagena and head to the beaches off the coast. It's definitely worth the long trip! #beachday #foodblog #pescatarian #pescado #fishrecipes #traveltips

Last Sunday was the final day of Cartagena's Festival de frito, coinciding with the Fiestas de la Virgen de la Candelaria. The event is known for its arepas innovadoras: as opposed to everyday fillings (egg+ ground or shredded meat), the arepas here are stuffed with all kinds of delicious fillings. This video features 2 types of novelty arepas: 1. Arepa de mariscos: (not too sure what was in the first, but there was definitely shrimp and snail) The other arepa de mariscos "Rompecondon" had shrimp, snail, octopus, squid, clam, and fish 2. Arepa de varias carnes: chicharron (pork belly), ripe plantain, chorizo, butifarra (a speciality sausage), and cheese. Which one would you like to try? #arepa #festivaldefritos #costeños #cartagena #mariscos #foodblog

Choco-pistachio from @lapetitegourmandecol a few weeks ago. Absolutely delectable and incredibly rich, perfect for sharing with a friend. It features a choux pastry with craquelin, filled with chocolate ganache and pistachio praline, topped with a piped pistachio cream and a sprinkling of pistachio. An absolute dream. #frenchpastry #dessertlover #patisserie #pistachiolovers #chocoholic

My first attempt at baking eggs, I broke a yoke and overcooked the eggs out of impatience. But it was still really tasty, I'd absolutely try again. What's your favourite way to have eggs? #foodblog #healthybreakfast #eggrecipes

Last week's brunch at @feroscafe Marbella! I had the Scrambled eggs with a ham and cheese croissant (slide 2) but started rethinking my choice the second this bagel arrived. I also ordered a lemonade that was frankly disappointing, but it was an overall positive experience. One of my favourite things here was the location! It's just across the road from the beach and they offer outdoor seating if you want to soak up the sun and sand. The interior features a complementary mix of concrete walls, wooden furnishings, and lush green plants. Perfect for a Saturday brunch. Would you pay them a visit?

Snapshots from my lunch the other day at @amasacafebrunch in Cartagena, Colombia. I ordered a coconut lemonade which was DIVINE – it's typical here in Cartagena but somehow I kept putting it off. Absolutely fantastic, I basically drank it all in one go. I also had the Chicken Supreme. It featured juicy chicken breast smothered in pomodoro sauce, parmesan cheese (in the silver receptacle), a side salad, and your choice of potatoes or pesto pasta. The meal, though seemingly light, was filling and the highlight for me was definitely the salad. As a general rule, I hate salad dressing but this one really added some flavour to the salad without masking the taste of the greens. Price: 30.000 COP (meal) + 14.000 COP (drink) = 44.000 COP – definitely worth it. #foodblogger #cartagena #limonadadecoco #kilahinstinct
