Thanks for having us Philly!! Our “Hawaii: A Culinary Crossroads” dinner series is about sharing the stories of the waves of migration to Hawaii and the influences the people and cultures had on the island’s cuisine. It’s about preparing the dishes/flavors that I grew up on during my childhood summers spent in Hawaii, my heritage, and the passion for cooking that I shared with my late grandfather. Another pop-up in the books! Thank you @lanai , Brent, Rick, and to all the sponsors that helped make this happen! 9 months of planning , going to a different city, an unfamiliar kitchen, and other countless challenges…and we pulled it off!! We’re doing another Throwback Thursday event this coming Thursday. With these monthly events (every 3rd Thursday), we’re preparing dishes inspired by the pop-ups that I’ve hosted and to also collaborate with chefs and artists that I’ve worked with back in the day. Collaborating on this special menu and 🎶🎶 with @mc.djpreach . This is a non-ticketed event and the dishes will be available to purchase à la carte from 5:00pm to 9:00pm on 4/16. Thank you @goodvibeseats & @birdhausbeergarden for the opportunity to host this event! Please spread the word!🤙 MENU Mochiko Chicken Bites-Chicken marinated in Mochiko rice flour, ginger, brown sugar, garlic, soy sauce, and toasted sesame seeds then fried to a crisp. Tossed in a slighlty sweet/savory glaze. Served with rice, mac salad, and pickled veggies. Pork Belly Coconut Adobo (Adobo sa Gata)- Seasoned pork belly smoked then roasted. Glazed in a sauce made with tamari, vinegar, black pepper, coconut cream, and bay leaves. Served with garlic/adobo rice, mac salad, and pickled veggies. Poke Bombs-Seasoned sushi rice stuffed inside sweet and savory fried tofu pouches (inariage). Topped with ahi shoyu poke and spicy ahi poke, toasted sesame seeds, green onions, and furikake. (Poke made with fresh Hawaiian Bigeye Tuna) Chicken Lumpia -Filipino-style crispy egg rolls with seasoned ground chicken and minced onion, carrots, and garlic. Tamari, fish sauce, and other spices. Topped with over 2 easy eggs, green onions, and Atchara. Chicken Katsu Loco Moco- Panko-breaded and seasoned crispy chicken, 2 over easy eggs, and tonkatsu gravy. Served with mac salad and steamed rice. Guava Cake Strawberry chiffon cake, layered with guava glaze, marshmallow whipped cream, and macerated strawberries. Topped with a crispy phyllo dough.

We sold out of our Raspberry & Lemon Bibingka Brûlée with Ensymada butter! Thank you to everyone that came out last week’s events! It was great seeing both familiar and new faces.. Special thanks to Chef AC Boral for making the trek out for our Throwback Thursday pop-up and for helping out with Sunday’s brunch.. and to @goodvibeseats / @birdhausbeergarden for the opportunity to host the Thursday event!

We’re back at @cordialcellarandlounge for Sunday brunch tomorrow from 10:30am-3:00pm.! All the dishes will be available à la carte.Here’s our menu: . . Chicken Lumpia -Filipino-style crispy egg rolls with seasoned ground chicken and minced onion, carrots, and garlic. Tamari, fish sauce, and other spices. (16 bite-size pieces) . Shrimp Lumpia-Filipino-style crispy egg rolls filled with a butterflied shrimp, seasoned scallion//garlic crema. Served w/ sweet chili dipping sauce. (6 pieces). . Katsulog-Panko-breaded cured pork longanisa, garlic rice, 2 eggs, kewpie, and pickled veggies. . Tosilog- Slightly sweet and savory roasted chicken thighs (tamari, brown sugar, pineapple, and other spices). 2 eggs, pickled veggies, and garlic rice. Served with spiced vinegar. . Dungeness Crab & Shrimp Stew (Ginataan)-Dungeness crab meat, diced shrimp, coconut cream, shrimp paste, fish sauce, and ginger. Served with roasted green beans and garlic rice. . I received the sad news that my dear friend Rex passed yesterday. I first met Rex through @lanai at Kuuloa Ranch at the filming of an episode of Cooking Hawaiian Style. When I found out that we were about to start filming he noticed that that my nerves started taking over. Rex did everything he could to make me laugh and calm my nerves. Thank you again for that Rex! He was always there to lend a hand at the pop-ups in Oahu and even made the trek to SF for one. I will always appreciate your outlook on life and will never forget the meals that we shared and conversations we had. Rex was one of the most kind, caring, generous, and genuine people that I’ve ever met! He shared aloha everywhere he went. Rest easy Rex I’m glad you’re no longer in pain and that you are reunited with your mom and dad. Thank you for everything! Until we meet again. Love and miss you braddah.
