We’re doing another Throwback Thursday event this coming Thursday. With these monthly events (every 3rd Thursday), we’re preparing dishes inspired by the pop-ups that I’ve hosted and to also collaborate with chefs and artists that I’ve worked with back in the day. MENU
Mochiko Chicken Bites-Chicken marinated in Mochiko rice flour, ginger, brown sugar, garlic, soy sauce, and toasted sesame seeds then fried to a crisp. Tossed in a slighlty sweet/savory glaze. Served with rice, mac salad, and pickled veggies.
Pork Belly Coconut Adobo (Adobo sa Gata)- Seasoned pork belly smoked then roasted. Glazed in a sauce made with tamari, vinegar, black pepper, coconut cream, and bay leaves. Served with garlic/adobo rice, mac salad, and pickled veggies.
Poke Bombs-Seasoned sushi rice stuffed inside sweet and savory fried tofu pouches (inariage). Topped with ahi shoyu poke and spicy ahi poke, toasted sesame seeds, green onions, and furikake. (Poke made with fresh Hawaiian Bigeye Tuna)
Chicken Lumpia -Filipino-style crispy egg rolls with seasoned ground chicken and minced onion, carrots, and garlic. Tamari, fish sauce, and other spices. (16 bite-size pieces)
