The ribeye cap is the outer muscle of the ribeye and one of the most flavorful cuts on the entire animal. Most places don’t sell it because they’re not breaking down whole carcasses, but that’s the beauty of whole animal butchery — you get access to cuts like this that you’ll never find at a grocery store. To place an order and schedule a pickup, email [email protected] with the items you’d like and the amount of each. We prefer to receive pre-orders 72 hours prior to pickup. We will confirm your request and pick-up day over email. We have burgers (seasoned or unseasoned), chicken wings and drumsticks, all-beef hot dogs, sausages (pork, lamb, or chicken), and heirloom flour hamburger and hoagie buns. We’re happy to receive custom requests too. Radius is a whole animal butcher shop with many relationships with local farmers, so we can fulfill creative special requests. Our products are always made with local, pasture-raised proteins from animals raised by local ranchers with the highest integrity practices.

When we source pork for Radius we’re looking at everything — breed, diet, lifestyle, age, and processing. We are very proud to offer pork from @yonderwayfarmer . The Kramer family raises heritage breeds — Hereford, Berkshire, Mulefoot cross — rotationally raised on pasture with non-GMO, corn-free, soy-free feed. Most pork you find at the grocery store comes from animals raised in warehouses, harvested at six months, and fed whatever is cheapest. Yonder Way pastured pork is a completely different product. We get the whole hog in and our butchers break it down by hand so every cut gets the care it deserves.

We get asked all the time how to cook Osso Buco at home. Osso Buco is a cross-cut shank with a marrow bone right through the middle. We recommend putting it in a pot and braising it for a few hours. The collagen melts, the marrow dissolves into the liquid, and you’re left with one of the most flavorful meals you’ve ever made. Grass-fed and finished, sourced from ranches we trust. Next time you see it in the case, don’t pass it up!

Pantry staples at most grocery stores have ingredients you wouldn’t find in a home kitchen — preservatives, synthetic citric acid, sugar alcohols. We source ours differently. Every item on our shelves is seed oil free, and most are made by small producers using traditional methods.
