Khmer food is never subtle. It’s vibrant, punchy, and filled with umami. Salty, sour, sweet, and savory are the foundations of the meal. Soon we’ll launch tickets for our next Khmer pop up. See you soon! Arkoun (thank you!)

Apsara represents the goddess of love and dance. During the Angkorian era, powerful and beloved Apsaras were believed to descend down from heaven and perform magical dances for the royal court and the Khmer people. Many carvings dating back to the 9th century are decorated all over Angkor Wat. After the Khmer Rouge regime took over in the 70’s, all forms of art were ordered to be destroyed. But because of all the Khmer women’s resilience and perseverance, the sacred dance was saved and preserved for future generations to come. We chose this name to represent us because like Apsaras, to serve and create meals for others is much like a dance and is made with so much love. As chefs we wanted a powerful goddess to represent us, what we do, and the culture we come from. Often in this industry, you have to be resilient, and command your space. What better goddess should look over us than the Apsara.
