Satay marinated roast chicken with peanut sauce 🥰 2kg whole chicken 2 tbsp turmeric 1 tbsp chilli powder 2 tbsp coriander powder 2½ tbsp salt 1½ tbsp brown sugar Inside: 1 lime (halved), 3 lemongrass (crushed), 1 bulb garlic (halved). Pat chicken dry. Stuff cavity. Mix spices and rub all over. Leave uncovered in fridge 24hrs. Roast at 160°C (covered) for 1 hr 30 mins. Increase to 200°C, uncover and roast 20–30 mins until internal temp hits 75°C.
