The #ukbgncc2021 first stage this year was centred around @akashitaisake and I wanted to make a drink that tied in to the brewing heritage of both Japan and the UK.
The spirit of the oldest tree in a cider orchard is traditionally responsible for the fertility of the orchard itself and in the same way, the previous generation is responsible for shaping us and the world we belong to. I wanted my drink to pay homage to traditional drinks making and use that heritage to create something new.

With 10 days left of the #taliskerrewildchallenge, this is a quick shout out to all the Leeds bartenders taking part. The challenge is a collective effort with competitors doing some amazing things in the name of #rewilding as well as slinging out some delicious drinks. @talisker is going to donate 50p from each drink sold to @parley.tv in an effort to help rewild the oceans with @belowstairsbar matching the contribution for each Bramble By Sea that's been sold since the beginning of the challenge.

This year's Talisker challenge is all about #rewilding and getting people out in nature. To celebrate that, I've created a drink centred around that icon of British hedgerows and woodland: the bramble. Inspired by family outings to pick fruit and being out in the woods, I've foraged blackberries and bramble leaves from the trails of #meanwood to make a drink that brings the nature of #northleeds to the rugged coastlines of Skye.
