NEW COOKBOOK: The Power Five (National Geographic)
@imago_hassler is a wonderful restaurant at the top of the Spanish steps in the Hassler hotel. It has one Michelin star, an incredibly creative menu and a wonderful staff. This was my second visit and this time we opted for the âcreativeâ menu and it was delicious. But I must say the highlight for me is the first dish of the classic menu, that they also gave to start the meal âa Pizza Margherita in meringue form. This one bite that dissolves in your moth captures the true essence of pizza-itâs worth a visit just for this! But of course the rest of the dishes are also amazing and reimagine traditional Roman cuisine as well as distill the flavors into their true essence. Look forward to returning again next year.
First stop in Rome is almost always @soramargherita for carciofi alla judea (there was more than one) and torta di ricotta e visciole plus other dishes too! I think weâve been coming here for almost 20 years and itâs been around for almost 100.
Had two amazing lunches in SF recently. First at @anglersanfrancisco where I had their quick catch lunch. I have been before and it is an awesome restaurant worth trying and itâs focused on fish one of the power five foods! I had west coast oysters (picture 1), grilled Sea bream with a delicious light flavorful coconut sauce (picture 3), the amazing soft serve sundae with caramel and cocoa nibs. I added the Nashville style hot frog legs because I had to try them (picture 2). I did a lot of walking afterwardsđ. The next day I met a friend at @cotogna_sf for the first time and Iâll be back. We tried a few of their very seasonal vegetable dishes and pastas. The food was rich and outstanding. I look forward to going back in another trip. We had asparagus salad with kumquats which was super bright (pic 5), the snap pea and ramps (6), and a carrot sformato with a peashooter emulsion which was out of this world (7). And for the pastas the fettuccine with asparagus (8), garganelli with peas (9), and the incredibly fluffy and delicate nettle tortelli (10). Finished up with a rhubarb tart and an 8 mile walk which of course included a stop @heathceramics (picture 4).
Cooked a spring themed meal last night with family. Started by getting a fresh ham @meatwagonllc a great local butcher in Kingston NY. They get pork from @kinderhookfarm . The process started with 6 days of dry brining then nestling the ham in some local alfalfa hay and sealing it up for a long slow cook. It came out juicy and richly flavored and the sauce made from the liquid in the pot was like a hay umami bomb. There were lots of Power Five Foods on the table too: a radicchio and fennel salad, fresh fava beans, poached asparagus with aioli, poached @hudsonvalleyfisheries steelhead with a sauce vierge, potatoes, and a 3D bunny cake with a cassata filling for my cousins birthday.
