VIRAL DUMPLING LASAGNE @drchintalskitchen
Ok this is was delicious! 🤤 I can see why it’s viral! It’s literally the easiest recipe to make and totally ticks that dumpling craving!
Definitely try this one for fakeaway Friday!

Recipe:
500gm chicken mince
200g Choi sum - finely chopped
6 spring onions - finely chopped
2 tsp minced garlic
2 tsp minced ginger
4 tbsp soy sauce
1 tbsp chilli oil
Water 💦
Dumpling wrappers - 280gms ish
To serve:
Soy sauce
Chilli crisp
Sesame seeds
1️⃣ Mix all the ingredients together except the dumpling wrappers and use your hands so it’s all incorporated really well
2️⃣ Layer up as seen, 1 layer of dumpling wrappers, 1 layer of mix, and 2-3 tbsp of water each layer (this keeps it juicy)
3️⃣ Make the top layer dumpling wrappers, pour on another 2-3 tbsps of water
4️⃣ Cover & Steam cook for about 30 minutes until the chicken is fully cooked. Depending on how thick your lasagne is this might vary, you can always check with a meat thermometer that the centre is 175F/85C
5️⃣ Serve right away wait a drizzle of soy sauce & chilli oil and a sprinkle if sesame seeds!

MICROWAVE BIRYANI @drchintalskitchen
I love biryani 😍 Ok so I know this isn’t actually a biryani, but this 15 minute microwave dish gives me all the biryani vibes in a fraction of the time 🙌🏾
Perfect after a long day at work when I just need something quick & easy on the table! It’s kiddie friendly too - I just add some chilli pickle to my portion
If you prefer, you can off course make this on the hob too - Perfectly fluffy, delicious & super easy, have I persuaded you yet?

Recipe: Serves 4
250gms Basmati rice
100gms tomato purée
2 tins chickpeas
500mls water
1 tsp salt
2 tsp biriyani masala
Handful fresh coriander
50 gms fried onions
1️⃣ Wash and rinse the rice three times and then soak in water until you are ready to use
2️⃣ Put the chickpeas, tomatoes puree, salt, biriyani masala & water in a large glass bowl (approx 3L bowl) & mix well
3️⃣ Sprinkle on 1/2 the fried onions & fresh coriander
4️⃣ Drain the rice and add this to the bowl, spreading it out like a layer on top of the chickpea mix
5️⃣ Finish with rest of the fried onions & coriander. The mix should only fill half the glass bowl max or use a larger bowl
6️⃣ Cover with a plate and microwave on high for 15 minutes (My microwave is a 1000W inverter microwave - adjust the timing for your wattage)
7️⃣ Remove from the microwave & let it sit for 5 minutes before fluffing up the rice to serve
Serve with a quick raita or Greek yogurt

Recipe
Serves 4
350g sushi rice - cooked as per instructions
2 salmon fillets - sushi grade or cooked
2 tuna steaks - sushi grade or tinned (I mix with mayo)
10 prawn tempura - cooked
1 large rip avocado
1/4 cucumber - sliced into strips thinly
4 spring onions - sliced into strips thinly
Sesame seeds to sprinkle on top
Togarashi spice - I love this! Optional
To serve:
Nori squares
Wasabi paste
Sushi ginger
Chilli sauce
Mayo
1️⃣ Cook the rice & lay into your platter
2️⃣ Assemble all the fillings on top or in the middle is better so you can access it all
3️⃣ Tell everyone to get rolling!

Comforting Parsnip & White Bean Soup 🥣

This soup filled me up SO much! It’s such a delicious way to use up leftover roasted parsnips.
I used mostly frozen ingredients, but you can of course use fresh (just make sure you’re following my account to find out how to freeze any excess ingredients 😉).

Ingredients (1 generous bowl or 2 small bowls):
- 150 g puréed frozen roasted parsnips
- 60 g cannellini or butter beans (open freeze the rest of the tin to use later!)
- A handful of frozen onion
- 1 frozen clove garlic, crushed
- 240 ml vegetable or chicken stock
- A sprinkle of thyme (I only had mixed herbs)
- A splash of olive oil (not as much as I used - I slipped 😂)
- Salt & pepper, to taste
Method:
1️⃣ Heat the oil in a small saucepan over medium-high and cook onion until it’s soft and the excess moisture has evaporated.
2️⃣ Add garlic and thyme, cook for 30 seconds.
3️⃣Add the frozen parsnip purée and stock, then put the lid on and bring to a gentle simmer. Stir well to ensure the parsnip is fully defrosted and heated through.
4️⃣ Add the beans and cook for 10 minutes, stirring occasionally.
5️⃣ Season with salt and pepper to taste, and either serve as it is, or use a stick blender to blitz until smooth. Serve with a crusty roll 😋

🩺 Red lentils are a great source of protein, fibre, iron and folate. Pair with brown rice for a delicious balanced meal with 2 of your ‘5 a day’ per portion
Recipe:
300gms red lentils (masoor daal)
350mls water
400ml tin coconut milk
2 tablespoons tomatoe purée
200gms frozen chopped spinach
1 tsp cumin seeds - toasted on the hob
1/2 - 1 tsp Turmeric powder
Salt to taste
Handful chopped coriander to garnish
Tadka:
1-2 chillies 🌶️
6-7 cloves garlic - thinly sliced
1-2 Tsp ghee
1️⃣ Wash the lentils a few times and rinse well
2️⃣ In a large microwaveable bowl add the rest of the daal ingredients and mix well
3️⃣ Cover & cook in the microwave for 15 minutes on high power. Mine is 850W if yours is Less it might need a little longer. Alternatively simmer on a medium heat on the hob
4️⃣ To make the tarka, melt the ghee in a pan and add the sliced garlic & chillies, allow to soften slightly, Remove from heat & give it a quick stir before pouring onto your hot cooked daal
5️⃣ Sprinkle on fresh chopped coriander & serve right away with hot rice

Top tip - use a heavy plate to cover and a large bowl (at least double the volume of the ingredients) to prevent any overflow in the microwave 🔥

15 Minute Miso Noodle Soup using up any frozen veg you happen to have in your freezer!

Recipe:
200g mangetout
200g red cabbage, thinly sliced (fresh or frozen)
100g edamame beans (fresh or frozen)
3 spring onions, sliced
3 tbsp white miso paste
250g instant ramen noodles
2 tbsp low-salt soy sauce
200g baby spinach leaves
380g firm tofu, cut into bite-sized pieces
2 tbsp sesame seeds
1 red chilli, sliced, or chilli oil to serve
1️⃣ In a large pan over medium heat, add 1.5 litres of water.
Bring it to a boil and add the mangetout, cabbage, edamame beans, spring onions (reserving some for the garnish), and miso paste. Cook for 2 minutes
2️⃣��Next, add the noodles, soy sauce, spinach leaves and tofu and cook for a couple of minutes until the noodles are cooked, or follow the instructions on the noodle packeet
3️⃣ ��Serve immediately, garnished with a sprinkle of sesame seeds, the reserved spring onions, chilli slices or chilli oil, if you like.

A smarter way to make fish pie… Dump & Bake recipe!
Remember that frozen mash from December?
As promised — here’s how to turn it into a proper fish pie that saves time and still feels comforting. No cream. No separate white sauce. Just dump & bake and let the oven do the work!
Save this for busy weeknights, freezer wins & easy family dinners & follow for the rest in the series!

Recipe (serves 4):
• 300g fish pie mix
• 320g frozen peas
• Salt & pepper
• 3 tbsp plain flour
• 350ml milk
• 500g mashed potato (fresh or frozen)
• 100g grated cheese
1️⃣ Add fish + peas to a baking dish.
2️⃣ Season, sprinkle over flour and mix.
3️⃣ Slowly pour in milk and stir gently.
4️⃣ Top with mash, then cheese.
5️⃣ Bake at 180°C fan for 30–35 mins until bubbling and golden.
6️⃣ Serve with a side salad & Enjoy!
