Just in time for spring in Zürich, the lecture hall at @ethzurich filled with thirsty beer fans and curious home brewers, we finally got to do the Cook the Science "beer lecture"!
🏺 In a short history lesson, we review the world's oldest beer recipe (on a stone tablet, about 4000 years old). Did you know that beer was most likely brewed as early as 7000 years ago? This makes beer older than bread! (We don't blame them...)
🫧 Great beer comes with great foam. As every bartender knows: A clean glass - but without soap residues! - is essential for good foaming behaviour. The rest is just chemistry 101: Gas bubbles forming at nucleation sites, trapped by the protein network from the malt.
🔬 Our craft brewer, Dr. Stefan Wolf, gives us a glimpse into his lab. Learn how a biologist does quality control in a brewery - and why a good craft beer usually doesn't need pasteurisation.

To celebrate this upcoming Pi Day (March 14th) we are releasing a 6% Multigrain I-Pi-A today.
This IPA explores the brewing process of using 11 different grains, which is far beyond the usual.
The result is a carefully balanced IPA that shares the familiar IPA energy that has been reimagined through grain diversity. 🤓🍻
The 11 grains used are barley, rye, oats, wheat, spelt, buckwheat, quinoa, amaranth, millet, flaked corn, and rice.
