From CBC: Harnessing Sensory to Make Award-Winning Beers
Double Eagle was privileged to participate in a presentation at CBC in Philly on Maximizing Craft Malt using hot steep sensory analysis, a simple yet effective way to predict the flavors and textures of your next beer and reduce development time to produce award-winning results. Guided by Dr. Harmonie Bettenhausen, we and three other malthouses from around the country each presented a case study outlining collaborations with our local partners to develop or improve the quality of their products. Attendees participated by blind tasting 4 wort samples and sharing their perceptions in a word-cloud display.
It was a cool experience.
You want this now.
@sauconybeer 's rich, indulgent Salted Caramel Chocolate Milk Stout is made with PA-grown and malted grains from @doubleeaglemalting , cocoa, lactose and salted caramel and delivers a sweet dessert-like profile. And at 7.2% ABV, it’s a perfect winter beer, but it does the trick no matter the season. Enjoy before nodding off during your next Phillies game. It won’t help the hitting, but it won’t feel so bad.

JUST milled another batch of Malted Barley Flour today! We call this “Bakers Pixie Dust” & it’s been growing in popularity among our customers recently. It’s a diastatic (dough enhancer) - increasing rise and giving the bread a beautiful brown color!

Introducing Declaration Lager from @runawaytrainbrewery in Honesdale PA, the official beer of @america250_pa . Brewed with Pennsylvania grain, it is a tribute to hardworking family farmers like Fred Slezak, owner of Lone Maple Farms in New Alexandria, who just won the award from the annual #pafarmshow for best barley in the state and overall grain Grand Champion. Double Eagle maltster/owner, Scott (left) and Runaway Train owner, Greg celebrate the launch of the first 100 BBL batch during a get-together at the malthouse where Fred's grain was malted for the brewery.
Declaration Lager is widely distributed throughout the state, so look for 12-packs of 12-oz cans near you and if you don’t see it, ask for it! Every beer you enjoy supports a PA family farmer like Fred.

My kind of harvest ale
I don’t usually post about my own homebrew creations, but this was too tempting to pass up. I brewed a harvest ale using @doubleeaglemalting Pennypack Pilsner and a little Vienna along with some homegrown Nugget hops. Not knowing what the AA was, I used it conservatively and ended up with a delightfully drinkable but underwhelming beer. So I dry-hopped the second fermenter of the ten-gallon batch with some homegrown Chinook and New Mexico green chile that I roasted and froze at the end of the summer, and I ended up with an intriguing and complex flavor that hits all the right notes for my kind of harvest ale. Really proud of this one.

Craft beer supporting a fun cause
Bruise Berry Lager, brewed in collaboration with Weyerbacher’s community teammates at Lehigh Valley Roller Derby (@lv_roller_derby ), is proudly made with PA-grown barley, wheat, and rye malts from @doubleeaglemalting .
According to @weyerbacher_brewing , “it’s light on its wheels but not on impact: smooth and approachable with a touch of rye spice and subtle noble hop character. Aromas and flavors of blackberry and blueberry break free from the pack to bring this jam home.”
Now the cause: $1 from every pour goes back to support Lehigh Valley Roller Derby.
Cheers!

Took some time to stop in at one of our newest brewery customers recently, @springhousebeer in Lancaster, to sample Backroads Shadows. It’s a local origin lager made with PA grain from @doubleeaglemalting and locally grown Pearl and Comet hops from GEMS Farm Hops.
Not only was the beer delicious, but I was really impressed with the destination. The brewery, taproom and outdoor seating are welcoming and very family-friendly. It was buzzing with folks coming and going for lunch and brews on a recent Saturday afternoon. If you’re in the neighborhood, be sure to stop in.

Pennsylvania beers made with PA grain. What could be more natural?
More and more PA craft breweries are discovering the benefits of brewing their beers with PA-grown grain. And whether they use the PA Preferred logo from the PA Department of Ag, or our exclusive “Made with PA Grain” trademark, or even our logo, consumers are noticing. Fresh, locally grown malts from our PA malthouse taste better than products harvested months earlier in faraway lands and trucked in from warehouses. Just ask anyone who enjoys the farm-to-table dining experience.
Can you spot those trademarks on these PA beers?
If you are a brewer looking for a way to distinguish your product or your brand, supporting local farms is a great way to do good for the local economy.
If you are a craft beer consumer with a palate for malt, look for the #madewithPAgrain logo on the tap list or can. Every beer you buy helps support a PA family farmer.
Thanks to the many local craft
breweries and distilleries who care enough about local agriculture to feature our farmers’ grain in some or all of their products.

“Backroad Shadows,” a Pennsylvania harvest lager, debuted last week at @springhousebeer in Lancaster. Made with 100% PA grain from @doubleeaglemalting in Huntingdon Valley and 100% PA hops from @gemsfarmhops in Carlisle. Look for the PA Preferred logo on the can label. Ask for it at the brewery and look for it in area taprooms.
The recipe includes a number of locally grown malts including pilsner, rye, heirloom corn, Vienna and Aromunich 40, our medium melanoidin malt that contributes a bit of color and a rich backbone to the lighter grains. We strive to maintain a wide assortment of specialty and roasted malts to give PA brewers the opportunity to make virtually any beer style with locally grown grain.

Hey, fans of @humanrobotjenkintown , there’s a new boss in town, Jefe Dorado, a new house lager made with all-PA grain that complements perfectly the in-house Mexican food menu from @cantinaonthego . With a grain bill of 75% light pilsner malt and 25% malted corn, all grown and malted locally, this is an easy drinking and very satisfying pour. During a recent visit, Jefe was clearly the popular choice.
Salud!

@Tanneryrunbrewworks just released their Hadrian’s Folly ESB made with locally grown Rustic Ale Malt from @doubleeaglemalting . Malty rich and well balanced with a firm bitterness and a creamy head, it’s the perfect beer for fall weather. It’s not their first beer Made with PA Grain, but Owner/Brewmaster Tim Brown says “I will keep making this beer with Double Eagle malt. It’s better with it.”
Cheers to that!
