Say hello to our wee explanatory dookit! As a warm welcome to our new followers I thought it wise to have a useful, eye-catching and meaningful object which explains what a dookit is (for those who are unfamiliar), the connection to the brewery and what Dookit Brewing is all about. Also, Tam and I have been whisked away to several festivals down South this year (thanks @weare_beer ). A few English folk have curiously asked ‘what’s a dookit’? So in anticipation for @lcbfestival this weekend we’ve packed Jim Cowie’s helpful creation. Jim (neighbour, artist, architect student and fellow dookit enthusiast) and I met in our close one day. ‘Nice hat’, he remarked, pointing to my Dookit Brewing beanie. After chatting I discovered he was building a dookit for his end of year project (see the last slide). One chat led to another chat, which in turn led to this incredible sculpture being made. Cheers Jim! And thank you serendipity: sometimes wondrous things can seemingly appear from nowhere. And I ought to say thanks Thomas Woods for the photos; as always, they’re brilliant. That’s the Afresh 2026 brew out in the wild. Originally brewed in collaboration with @petermckennaglasgow1 & @slowfoodglasgow , it has become a staple every Spring here at Dookit Brewing. A heavily hopped New Zealand pale ale with foraged sticky willow and sugar kelp, it was the brewery’s first foray into foraged ingredients over four years ago now. More research surrounding New Zealand hop harvests and knowing the perfect time to forage for sticky willies, makes this the best version yet. It’s marvellous thinking about how a ubiquitous weed picked locally and Southern Hemisphere hops grown on the other side of the world complement each other so beautifully. Expect big, juicy citrus and tropical fruit flavours alongside a botanical edge reminiscent of cucumbers and freshly cut grass. Hazy & soft, with a moderate bitterness and a dry finish thanks to the sugar kelp. One for the hazy NEIPA hop heads and curious alike. Pick up a tinnie from your local indie off licence now and indulge in locally made Springtime goods. Cheers 🍻🌱💚

Super fresh 2026 Afresh to be released this Friday. A heavily hopped NZ pale with Wakatu, Riwaka and locally foraged sticky willow and sugar kelp. 5.6% abv Launching @sylvanlacave this Thursday from 5pm onwards where I’ll be hanging out until 8pm. Come bother me, try the beer as fresh as can be, and hear me geek out about NZ hop harvests alongside sticky willow foraging. Originally brewed in collaboration with @slowfoodglasgow

Here’s some pretty mundane photos from one of the most interesting weeks here at Dookit Brewing. Well, certainly interesting for me, and may also intrigue other fellow lovers of expressive and highly bitter Belgian pale ales. I’ve been thinking and planning out a Belgian inspired pale ale recipe for just over a year now. The idea formed after I started adding the Cascade dry hop addition of the Southside Pale in at the whirlpool stage. Suddenly, just over 3kg of hops were used without any isomerization occurring. Something must be brewed with all this bittering potential I thought! What a shame it would be to continue brewing the core range pale and waste all that goodness, not to mention money… The beer that truly does it for me is Brasserie De Le Senne’s Taras Boulba. Time and time again, after a long day in the brewery, I reach for one. Both for its crisp, dry and lemony refreshment value and the aggressively high, but balanced bitterness. No wonder it has grown to such great acclaim with its bold, distinctive character while maintaining an accessible drinkability. I have not tried to brew a clone of this beloved beer, but taken several pointers: a saison-like yeast strain fermented at fairly low temperatures; a pilsner grist with small amounts of very low crystal in the mix; that BIG bitterness paired with sweeter and fruitier flavours; and, utilising the grassy, fragrant and citrus quality of certain German hops. I’ve also leant on British traditions with some UK hops in the mix: the Cascade, although of US heritage was grown in Kent and a decent amount of Harlequin was added in the WP. I’d like to think this approach along with the dry hop addition coming up would be something BDLS would approve of! But who knows. So far so good and interesting. I look forward to sharing further developments. 🍺🇧🇪💚

We are excited to host Harry from @dookitbrewing as he launches his new addition of "Afresh" in collaboration with @slowfoodglasgow Thursday 7th of May 5pm-8pm at La Cave. Free entry and tasters! The Beer - Afresh is a New Zealand pale ale, heavily hopped with Wakatu and Riwaka for a floral, tropical fruit and limey-citrus kick. The New World citrusy hops balance very well with the locally foraged goods, all making for the perfect Spring tonic of a beer. Look forward to seeing you there 🍺🍻

The first Spring special is here! A warm welcome back to Lupo Pils: a premium quality Italian Pilsner style lager beer. It was an absolute pleasure to brew this recipe again. A favourite here at Dookit Brewing, Lupo Pils honours the niche and cool Italo Pils style, while putting our own wee stamp on it too. Grassy, dry and bitter, it’s everything you want from the style, but with an added fruity and floral overtone not often found with other examples. The recipe calls upon Eraclea malt and Saphir and Perle hops. Fresh grass, herbal and spicy notes all give the beer that pleasing noble hop impression and the modest Saphir dry hop conjures up citrus-sweet tangerines. It’s certainly a crisp, hoppy and hugely refreshing lager, and is available now. Find it in a great indie off-licence near you soon. ☺️👍💚🇮🇹🍺

Dookit’s Southside Pale Ale is pouring beautifully at the moment. Hazy and fruity, it’s made with hops grown on a family-owned, neutral carbon farm in East Kent. Can-conditioned, expect a smooth mouthfeel and moderate carbonation alongside notes of grapefruit, orange zest and freshly cut apricots.

We’ve just added beers from batch no. 055’s @dookitbrewing to our online shop. Based in Glasgow, Dookit is a Glaswegian term. Technically a description for a structure built to house pigeons or doves, it’s also the local word for a small, snug space and the perfect name for a brewery owned and operated by one man. Here’s a can of fresh Clark’s Lager looking resplendent in some March sunshine. This is the fourth commercial batch of Dookit Brewing’s core range lager and it’s out now, on a shop shelf near you. Easy-going yet flavourful, Clark’s is a premium Scottish lager of low to moderate bitterness. Whole leaf, high-quality UK grown hops Fuggle & Pilgrim bring about pear and red fruit notes, with a hint of that famous Fuggle floral grassiness. @lallemandbrewing Novalager yeast was pushed a little higher temperature wise this time, which promotes a complementary juicy red apple ester. All of this atop a malt base mainly made up of an historical Czech variety. Originating from Moravia, and used to brew the first pilsners back in the 1840s, the Haná variety is a favourite here at Dookit Brewing. Sourced from @crispmaltings in Norfolk and selected for its honeyed sweetness and freshly baked bread character, it sets up Clark’s Lager to be smooth and flavourful with a dry and satisfying finish. Lagered for a month and a half and packaged just the other week. As always the beer has been can conditioned for finer bubbles and an enhanced mouthfeel. Cheers and enjoy! Artwork by @calum_herbert_
