Christmas croissants, 2025.
This year, I used a tiny fan blowing over a pan of water to circulate warm, moist air from the heater below so both levels of croissants would proof evenly.
Officially in my jerky era.
This is gen 3 of this year‘s batch, with a 24 hour pineapple habanero brown sugar marinade, to make the beef a bit more tender.
Fun fact: 1 pound of raw top round beef yields about 1/2 pound of jerky.
