< Taste Differences: Ice drip vs. Hot Brew >
The same coffee bean can taste surprisingly different depending on whether it’s brewed cold or hot.
Hot brew extracts quickly at high temperature, releasing aromas all at once. Acidity, sweetness, and bitterness appear together, giving a direct and complete impression.
For those who want to experience a coffee’s flavor profile immediately, hot brew makes it easier to understand the character of the bean.
Ice drip, on the other hand, works differently.
The low temperature and long extraction time slow down the release of flavors. Acidity is usually softer, bitterness is lower, and fruity and sweet notes are drawn out over a longer period, with each layer more distinct. It doesn’t necessarily taste stronger, but the structure is often cleaner.
Ice drip and hot brew aren’t about which is better, they simply reveal two different sides of the same bean. The former emphasizes detail and balance, the latter emphasizes completeness and immediacy.

同一咖啡豆,以冰滴或熱水沖煮,喝起來其實可以很不一樣。
熱沖在高溫下萃取速度快,香氣釋放集中,

喝起來不一定更濃,但結構往往更乾淨。
因此,冰滴與熱飲並不是誰比較好,
而是呈現同一隻豆的兩個不同面向。
前者偏向細節與平衡,後者偏向完整與即時。

< Fruity Beans Are Better Suited for Cold Brew than Dark Roasts >
Cold brew coffee is most often made with fruity, light- to medium-roast beans, while dark roasts are less commonly used.
The cold brew process is gentle and stable, with low water temperature and long extraction time. This allows the coffee’s natural fruitiness and aromatic layers—such as berries, citrus, or floral notes—to be preserved.
At low temperatures, these delicate flavors aren’t quickly extracted away; instead, they gradually accumulate, resulting in a cleaner, more distinct taste.
In contrast, dark roast beans emphasize caramelization and roasted notes, such as cocoa, smoky aromas, or bittersweet flavors. These characteristics usually require higher temperatures to fully develop. In a cold brew environment, they can easily come across as overly bitter or flat.
Cold brew can still be made with dark roast beans, but fruity beans are better suited to this method, as they more clearly reveal their original complexity and balance.
