I'm in Kenya for 6 weeks.....doing a couple of fun projects for the @thesafaricollection starting at @thegiraffemanor Been casually feeding beautiful Rothchild giraffes the last couple of days (....my new normal). Excited to go up North to their luxury safari lodge, Sasaab, just outside Samburu National Reserve in Kenya’s Northern Frontier District...mountains and wildlife. Thanks to the uber talented photographer, my partner-in-crime @timrooneyphotography He's visually documenting both projects and everything in between. Then back to the Scottish highlands for the Summer, at the Fishing Estate.

**LAST HANDFUL OF TICKETS LEFT! PORTUGUESE SUPPER CLUB SATURDAY 7TH OF JUNE ** Come to this exciting new, Portuguese Supper Club a week on Saturday, in Manchester, 6 tickets left! Last Autumn I was at a beautiful, sustainable, rustic, boutique hotel @quintacamarena where international guests came for a multitude of retreats; yoga, art, activity packed programmes. They serve up local, organic food which is healthy, wholesome, colourful and super tasty. I practised my Portuguese and explored this wonderous cuisine, including a Seaweed themed Supper Club by talented female chefs @anamourals and Joana Duarte at the lovely @lamelas.restaurante I recommend. I was in the Alentejo region, a couple of hours below Lisbon. The area is famed for it's farmland, stunning rolling hills, woodlands, coastline and an abundance of tasty ingredients. The fabulous Brazilian Chef, Rafa, @nos__cinco took me under his wing.....introduced me to a whole load of other fab pals, he took me foraging for local mushrooms (see photo), we ate at pop-ups, cafés, seafood restaurants, a few different food markets. Now I'm going to be doing my premier Portuguese Supper Club at the beautiful Moregeous Mansion @makeitmoregeous in Fallowfield on Saturday the 7th of June. Eventbrite link in bio. WELCOME DRINK Poncha de Madeira: Classic refresher made with aguardente de cana (sugarcane rum), honey, lemon juice and orange juice. Tangy and sweet to get our evening started! STARTER Cogumelos e favas com chourico: Spiced charred oyster mushroom with broad beans and chorizo MAIN Meat Eaters : Frango na púcara com presunto Serrano - Clay pot cooked chicken with port, white wine, Serrano ham Vegetarian : Repolho grelhado no carvao com alho assado e molho de limao - Charred sweetheart cabbage with roasted garlic-lemon dressing Pimentões grelhados - Chargrilled peppers Arroz de forno com ervilhas - Oven-baked rice with peas Batata palha frita - Crispy potato straws Folhas vestidas - Dressed leaves DESSERT Pudim de laranja e vinho da Madeira com tosquiados - Orange flan with madeira and almond meringues £50p/p BYOB. *Rammy Supper Club date TBA in collaboration with @vineyard_wines_ramsbottom

Back after 3 months in Africa. I almost forgot what I saw in Africa, when I travelled around 17 years ago, as an observer. I'm thankful to have had the opportunity to revisit. I hardly have any images to show where I've been and what I've been doing and the incredible people I met (as usual). Two long months in Mozambique, Cheffing and Chef Training at a Scuba Dive Lodge was quite the colourful experience; a wild, rugged long bay, often deserted, often serene. Thanks to Artur for all of our time in the kitchen, a beautiful human being, so warm. And thanks to Martina for taking the piss out of me so much. Thanks to most of the people in Morongulo who welcomed me and let me in....and to most of the dogs too, all 7 of them, for joining me on my almost daily beach walks. Thanks to Nick for his sincerity and understanding. Oh and thanks again to Martina, who has allll the medecine. Finally over the whooping cough. Three weeks in South Africa to finish. Still a favourite country. Never driven so fast. Long mountain roads, so much sun. Thanks to Themi and everyone volunteering at #Onwaba who feed so many local kids and provide them with a place to have fun and smile. Sorry I wasn't there for long enough. Such an incredible project, helping so many beautiful children. Hope to raise awareness and money for you guys soon enough. Thanks to @glenasdias who first showed me what volunteering in your community and other ones is. In my opinion we should be doing it regularly, from an early age, in school time. Thanks to Deborah, doing the marketing at @Umngazi River Lodge, (near Port St Johns), who included me, gave me a genuine, interested and warm connection (plus a free night, room upgrade and 30 minute back massage all so I'd come back and have an even better and twice as long experience at this incredible, beautiful place.....all for, essentially a shout out. Sorry for the delay). I implore people to come and experience this gaff and the people and their smiles (Aubrey in particular) and the inordinate amount of food all day long. I hope to be back. Next up was September in the Scottish Highlands working at a Fishing Estate for the Lord, Lady and their family.

**SAT' 2ND OF DEC' - CENTRAL AMERICN SUPPER CLUB** Nearly sold out! Last handful of tickets left for you to grab. I'm excited to host ma next Supper Club, after a short hiatus whilst enjoying pursuing other catering avenues; charity work, batch cooking, teaching Food Preparation & Nutrition. Next Saturday I'll be Southside at the beautifully formed @cafeabloc in leafy Hale and Altrincham. 6:30pm start for ya best night out this year! I'll be showcasing my research from my travels down from Mexico to Colombia when I was doing research/eating my around/trying as much as possible and learning a colourful plethorabof fantastic cuisines.....with some sympathetic crossovers and fascinating differences. Pictured here is one of the hardest and most incredible hikes I've ever done; climbing up Acatenango Volcano close to Antigua in Guatemala, where I spent a lot of time. Including my birthday.... driving across the country 8 hours, up to the beautiful luscious jungle above Semuc Champey - full of turquoise pools and caves. Staying in the jungle retreat, nestled high up @utopiaecohotel where I learnt all about the local cacao and their process using the sun-dried beans and how to make chocolate delights. 4 mouth-watering courses for just £45 p/p. A Bloc will have a couple of guest cocktails inspired by my Latin American menu as well as their regular @reservewines list, which is well revered. I'm imagining some cool Xmas dos; work, friends, family ya can't be with on the big day, etc. Tickets are available to book through my website (link in bio).
