Some meals are more than just food! They’re a collection of time, patience, craftsmanship, and passion brought together on a plate This Italian guanciale began weeks ago with @devonkurobuta @blackandwildhq Berkshire pig cheeks, chosen for its incredible marbling, deep flavour, and beautiful quality of fat, exactly what’s needed when making proper handcrafted guanciale from scratch Each piece was carefully cured by hand using the @fireflybbq Bacon kit with rosemary and black pepper and then watched over day by day as time worked its magic Slowly developing flavour, texture, and depth the Italian traditional way, without rushing the process or taking shortcuts The final stage was all about fire and smoke Slowly hot smoked for 7 hours at 150°C on my ride or die @pitbarreluk using @bigkproductsltd ACH15 lumpwood and cherry wood to give it a deep flavour Allowing the fat to gently render while layers of smoke permeated deep into the meat The aroma rolling from the @pitbarreluk was unreal, rich pork, rosemary, cracked pepper, hardwood smoke, and caramelising fat all coming together into something truly special that is guanciale The outside developed a beautiful deep mahogany colour while the centre stayed soft, rich, and creamy Honestly, it would have been a crime not to make a beautiful homemade sourdough to go alongside it so I rustled one up knowing lunch was going to be just fab Fresh baked bread, green tomatoes, pickles to cut through the creamy sweet fat, of the handcrafted guanciale Proof that some of the best lunches come from simple ingredients treated with care and respect This is the kind of cooking I love most 🧡 Slow cooked food, Live fire, real craftsmanship, no shortcuts, just made with love 🧡🥂🍊 #fireflybbq #bigkproducts #pitbarreluk #guancaile #berkshirepigs

Spicy Cajun @devonkurobuta @blackandwildhq Berkshire pork belly on the bone, gently spinning on the @kamadojoeuk rotisserie Cooking it bone in just hits different… deeper flavour, richer juices, and that perfect self basting crust as it turns, makes for mouthwatering pork bites Finished with a fresh lime spritz to cut through the richness and lift everything up While that was ticking away, I pulled together a proper flavour bomb of a Cajun cornbread, packed with scotch bonnet heat, fresh ginger, burnt butter, spring onions and charred sweetcorn Finished with a hit of lime and drenched in @fireflybbq sweet smoky agave nectar for that balance Cornbread was baked in @gozney using residual heat, after scorching the sweetcorn in burnt butter and making the most of every bit of fire and flavour The rotisserie pork was perfect roasted over the unreal heat retention of ACH15 from @bigkproductsltd steady, powerful, and perfect for long rotisserie cooks Full on Cajun vibes, bold, punchy and that cornbread is seriously addictive #cajun #rotisserie #fireflybbq #bigk #porkbelly

These amazing American ribs from @devonkurobuta were just amazing. I cooked these on the @monolithgrillukir Icon and used the fire plate to turn it into a massive plancha. I rubbed the ribs with Lone star SPG and then finished it with citrusy Japanese BBQ sauce from @fireflybbq . The pork was just stunning and then that combined with all flavours from the rub and sauce it was amazing. Of course I had to do some Halloumi as well just because I love it. #pork #food #cooking #foodporn #monolith

Happy Easter from all of us at Black & Wild HQ A weekend of fire, fresh air, friends & seriously good food… Cooking our own @devonkurobuta pork on the @pitbarrelukl — from monster double chops to our new Tomaporks — with that incredible flavour from @bigkproductsltd ACH15 charcoal & the amazing rubs from @fireflybbq . Learning as we go, enjoying every moment… and of course, with Bear keeping a very close eye on proceedings by the fire in between having fun! Weekend starts here… Fantastic start to the weekend cooking on our new @pitbarreluk — with Bear proudly overseeing as the official Pit Barrel mascot 🐾🔥 Cooking our own @devonkurobuta Berkshire pork, we smoked a boned & rolled leg with @fireflybbq Memphis Pig Rub alongside a pulled pork shoulder — and the difference using ACH15 from @bigkproducts was something else. The leg was incredibly juicy and tender, with a beautiful balance of smoky sweetness… proper fire cooking at its best. This is exactly what it’s all about — simple, honest food, cooked over fire, using the very best produce. These amazing double cut Kurobuta pork chops from @devonkurobuta are just amazing. These truly make regular pork seem as good any more. They have the most amazing fat content that is so next level. I just used a dusting of Santa Maria rub from firefly but I wanted the pork to speak for itself. I just used a little sea salt on the skin that also makes amazing crackling out the outside of the chop. I cooked this indirect and then direct on the Monolith TWO and the cook was just perfect. I took these to 53°c and that is the perfect amount to keep it juicy. If you want to try an amazing cut of pork from some amazing pigs then you should try @devonkurobuta . Just carefully reared pork, simply seasoned.
