khao soi-ish spaghetti is now out in the world. very clearly and directly inspired by the most delicious plate of my entire portland trip (thank you @xiaoyepdx ) and very indirectly inspired by a friend’s (irrational?) hatred of spaghetti (you know who you are!), it’s a fun italo-thai fusion dish and weeknight friendly ode to khao soi with crispy chicken thighs, a rich coconut curry sauce (made with either homemade or amped up store-bought curry paste), plenty of fresh garnishes and, of course, plain old spaghetti. i hope you like it! recipe linked in my bio.

au poivre-ish pasta just landed. inspired by a deep love (see: potential overuse?) of black pepper and my perfect (imho) doenjang and sichuan peppercorn fortified au poivre sauce. recipe linked in my bio.

for the love of spätzle! i think it’s probably the easiest and quickest homemade pasta/noodle out there and more people should know how to make it, so consider this my plea and try it sometime will ya? get the full recipe for the spätzle itself (ingredients below) and for my caramelized leek and kimchi käsespätzle via the link in my bio. ingredients for ~4 servings •200 g all-purpose (550) flour •50 g semolina flour •1 tsp salt •2 large eggs •100-150 ml water
