How it started
8lb piece of Alaskan halibut, brined in tomato water for 6hrs then pan seared and slow roasted at 300F for 40min. How it’s finished
avocado smash, roasted tomatoes, radishes, extra virgin olive oil, lemon juice. Rock on!

Bouillabaisse, a wonderfully complex dish. Here I worked on the stock/broth for 2days, marinated the fish in tomato, saffron and Pernod, then pan seared it and the scallops, poaching all the shell fish separately to insure nothing was over cooked. So much for what is sometimes considered a “peasant” dish. The bonus here was getting to plate it in 100 year old dishes!!
