Bouillabaisse, a wonderfully complex dish. Here I worked on the stock/broth for 2days, marinated the fish in tomato, saffron and Pernod, then pan seared it and the scallops, poaching all the shell fish separately to insure nothing was over cooked. So much for what is sometimes considered a âpeasantâ dish. The bonus here was getting to plate it in 100 year old dishes!!
