🍇 Busy times in the vineyard as we check how close the grapes are to being ready for our first harvest!
At this stage, we regularly sample berries and take them to @defined_wine , where they press the juice to measure:
Brix – the natural sugar level (which will become alcohol)
TA (Total Acidity) – the freshness and crispness
pH – the balance and stability of the wine
Oechsle – the density of the juice, another indicator of ripeness
Tracking how these change week by week helps us decide the perfect moment to pick 🍾
2025 HARVEST POSITIONS, ENGLAND.
Defined Wine are looking for hard working, passionate people for a range of roles (cellar hands, vintage assistant winemaker and a press pad supervisor).
Defined Wine is a contract winery based over two sites in the southeast of England (Kent and Suffolk). We are looking for a vintage assistant winemaker and multiple cellar hands across both sites, as well as a press pad supervisor for our Kent winery. We work with over 13 different grape varieties including Pinot Noir, Pinot Meunier, Chardonnay, Bacchus, Rondo, Pinot Gris, Reichesteiner, Dornfelder and Ortega to name a few, and are one of the fastest growing wineries in England. We make wine on behalf of a vast array of clients, from sparkling base to pet-nats to barrel-fermented chardonnay and from English reds to English orange wine, the stylistic variance is vast!
The role(s) would be from Early-September 2025 -> Early-December 2025.
Cellar Hands will be responsible for racking, transfers, chaptalisation, inoculation, barrelling down, punch downs/pump overs and involved in conducting the ferment round, all whilst maintaining high standards of cellar hygiene. Previous cellar experience and a forklift licence are desirable but not essential.

To manage our multiple presses and de-stemmers for the busy harvest period at our Kent winery, we are looking to hire a Press Pad Supervisor who would be responsible for fruit receival and fruit processing. This role would involve leading a small team on the press pad as well as maintaining the highest standards of hygiene for all harvest equipment.
