1.5 pounds of ground beef
1/2 cup bread crumb
1/3 cup grated cheese
1 teaspoon salt
1 teaspoon pepper
1/3 cup ketchup
1 teaspoon Worcestershire sauce
Sargento sliced Mozzarella cheese
1 egg
I can of sweet peas
1 teaspoon oil (to oil casserole dish)
Pre heat oven to 350
Mix ground beef and all other ingredients into a bowl and create a loaf .. then dig holes into middle of meatloaf and put mozzarella inside
Cook on 350 for an hour and half
I like to put peas around it because we are a pea lover house lol even little C and Cami .. I mix the peas with a little olive oil and salt and pepper .. but you can pair it with any side you desire .. I’ll also be pairing with broccoli and mashed potatoes

CJs Fav Duck Sauce Chicken
Pre heat oven to 350 .. Just cover the chicken thighs in salt and pepper and then lather them in duck sauce
Cover with aluminum foil for 30 minutes
After 30 minutes take aluminum foil off and put more duck sauce on .. the more the better 😂
Then cook without foil on for about an hour with continuing to put duck sauce from bottom of pan onto chicken every 20-30 minutes and cook until chicken and duck sauce is nice and carmelized
I pair it with white rice and put the duck sauce from chicken onto the rice and fresh green beans with a little melted butter and sea salt
Balsamic Chicken
1.5 lb Thin sliced chicken breast
4 tsp Sea salt
3 cups Balsamic vinegar
2 table spoons Brown sugar
Roasted peppers
Sliced mozzarella
Balsamic glaze
Put 3 cups of balsamic and tsp of sea salt in frying pan and add chicken, place cover over frying pan and let boil for about 5 minutes .. uncover and add 2 tables spoons of brown surgar .. cook high for another 5-8 minutes or until chicken is completely cooked .. take chicken and place it on tray .. cover Chicken in roasted peppers and place diced mozz over chicken ..
Put oven on 250 and put put chicken into oven for 12 minutes .. take out and sprinkle with sea salt and drizzle with balsamic glaze

Garlic Chicken and Potatoes
Ingredients
-Chicken thighs skinless or with the skin .. if you get with the skin you can make it super crispy
-Oil
-Garlic
-Garlic powder
-Salt
-Gold Potatoes
Directions:
Heat garlic and oil until garlic gets browned add in chicken thighs garlic and salt let cook until chicken get browned on the outside
Add in cut potatoes ( I use steamables uncooked because they tend to cook faster )
Let them cook in the garlic and oil with chicken for about 8-10 minutes
Take out potatoes and put them in separate frying pan to brown potatoes on their own
Continue cooking chicken and potatoes separately until both are fully cooked and nice and crisp on the outside

Rosemary Pot Roast
3 lb bottom roast
1 table spoon rosemary (portioned through out dish)
1/2 table spoon salt (portioned through out dish)
1/2 table spoon pepper (portioned through out dish)
2 1/2 cups water
1 pack McCormicks beef stew mix
4 medium size golden potatoes
1 bag frozen peas
1/2 tbsp olive oil
Put bottom roast in crockpot and sprinkle with rosemary..salt and pepper cut potatoes and place potatoes in crockpot and season with rosemary..salt and pepper .. throw frozen peas into crock pot and drizzle the olive oil over peas.. potatoes and roast .. put in 2 1/2 cups water and beef stew seasoning then cover all meat and veges with mix.. sprinkle in a little more rosemary..salt and pepper
Cook on low for about 6-8 hours
When done and dished sprinkle some rosemary cover in rosemary/stew broth and enjoy 🤤

Baby Meatballs
Meatballs :
16 oz ground beef
1/2 cup grated Pecorino Romano
Tsp salt
Tsp pepper
( mix and make quarter size meatballs )
Sauce :
28 oz tomato sauce ( I use Tuttorosso )
1 cup water
1 cup grated cheese
1tsp salt
1tsp pepper
1 bag of petite baby carrots
Macaroni : I use Barilla Ditalini
Put sauce..water..cheese..salt pepper.. carrots and meatballs into pot and cook on low for about 2 hours ..cool with lid on but letting some air into the pot.. stir every 20-30 minutes
It sounds weird adding carrots but it’s what makes this entire dish different! And gets the kids to eat some vegetables ☺️

Easy Whole Roasted Chicken
6lb whole roaster
1 box of Chicken stuffing
1 bag of fresh green beans
Steamables red potatoes or 4 large red potatoes
4 lemons
Olive oil
Salt
Pepper
Garlic powder
Pre heat oven to 350
Oil baking dish with olive oil and place chicken into baking dish ..Make stuffing and once done put stuffing in the chicken with a spoon
Cut potatoes and then place string beans (uncooked) and potatoes around chicken
I then put slices with a knife into the chicken so lemon cooks into it .. after piercing the chicken drizzle olive oil over chicken and string beans and potatoes ..then squeeze the 4 lemons over the chicken..string beans and potatoes
Then cover chicken ..potatoes and string beans in salt .. pepper and garlic powder
Put in oven and let cook for 2 1/2 hours ..mixing the string beans and potatoes every hour
Take out..cut chicken (which falls right off the bone ..( so good ) 😜 and enjoy !!!!

Boneless and skinless chicken thighs
2-3 large potato’s
2 yellow onions
28 oz can of Tomato sauce
16 oz water
Garlic powder
Salt
Pepper
Pecorino Romano grated cheese
Pre heat oven to 350
Place checked thighs in baking dish ..Peel potatoes place around chicken .. it onion in half and place in corners of dish .. cover everything in salt..pepper..garlic powder and cheese .. pour in 28 oz can of sauce through out dish .. pour in water .. mix around to blend .. go over entire dish again with salt
Pepper..garlic powder and cheese
Cover dish with aluminum foil and bake in oven for an hour covered .. when you lift foil it should be boiling .. mix around potatoes .. then take off aluminum foil and bake for another 30 minutes
Let cool and enjoy !!!
