A throwback to a special pastry from last weekend's pop-up "Traditional Palestinian pastries: from Nablus" which was hosted by @grandcoffee
This nigella, olive oil, and semolina yeasted cookie-cake, which I named "Midnight semolina", is deeply nutty, with crisp edges and soft interior. It is also naturally vegan! Traditionally enjoyed with black tea or coffee.
Nigella paste is made in one city in this world. That city is nablus, and this dessert is rarely, if ever, found outside the city.
I absolutely loved seeing you all enjoy it. I look forward to baking this little decadent cakes for you all again soon!

My Palestinian hometown, Nablus, known for its refined kitchen and for kunafeh, has many more treasures to offer.
In this pop-up, I’m bringing a focused menu of savory and sweet pastries built around olive oil, nigella seed, oregano, and dates, ingredients that define some of the most traditional pastries of Nablus.
Rarely found outside the city, this is a chance to experience how they unfold across savory, sweet, and deeply nutty expressions.
