Unele cești au suficientă personalitate încât să merite mai mult decât o simplă fotografie.
Espresso Spiced Melony, El Vergel, Colombia
Este una dintre cafelele care nu încearcă deloc să fie previzibile. Te prinde din primul moment cu dulceață fructată, apoi schimbă registrul și lasă în urmă ceva ușor condimentat, viu, aproape neliniștitor de interesant.
Pepene roșu, melon, caisă, panela, note florale, accente ierboase și acel vârf discret de aji chilli care face tot profilul memorabil. Nimic nu pare pus întâmplător, dar nimic nu vine nici dintr-o singură direcție.
Vine din Tolima, de la El Vergel Estate, locul unde familia Bayter a dus cafeaua din zona agriculturii clasice într-o zonă de inovație atent calculată. Fermentații controlate, stabilizare, grijă obsesivă pentru consistență, totul construit pentru ca originea să poată fi simțită fără zgomot.
Lotul acesta este procesat Washed Double Thermoshock with Yeast, iar rezultatul este exact ce promite metoda: claritate impecabilă, separare frumoasă a notelor și o expresie aromatică greu de confundat.
Este prăjită de sumocoffeeroasters , unde genul acesta de cafea primește spațiul necesar să rămână autentică. Fără exces, fără intervenții care să o uniformizeze.
Iar în ceașcă ajunge doar dacă este extrasă cu atenție, pentru că o astfel de cafea nu iartă graba și nu funcționează cu jumătăți de măsură.
Nu este doar interesantă.
Este genul de espresso care îți amintește cât de complexă poate deveni o cafea atunci când fiecare etapă este făcută exact cum trebuie.
