A Tết classic 🧧😋
Thịt Kho Tàu aka Braised Pork Belly with Eggs
• 3 lb pork belly, skin on
• Cut into large 1.5-2 inch chunks
Eggs
• 8–10 hard-boiled eggs, peeled
Marinade
• Fish sauce 4 tbsp
• Sugar 1.5–2 tbsp
• Ground black pepper 1 tsp
• Shallot 2, minced
• Garlic 2-3, minced
Liquid
• Coconut water 2–2.5 liters (enough to fully cover pork)
Aromatics
• 2 whole shallots, smashed
Pork belly cut into large chunks
Parboil to clean then drain and rinse.
Marinate w fish sauce, sugar, black pepper, shallot & garlic overnight.
Place pork belly in boiling coconut water, bring back to a boil then simmer low and slow until tender.
Add hard-boiled eggs toward the end so they soak up all that flavor. Taste and adjust as needed.
Best eaten with hot rice & pickled veggies
Lasagna layered with flavor, made with love and intention. The sauce was simmered for hours to allow the veggies and meat to speak for itself! Béchamel layered in to add that silky creaminess. Parmigiano to finish off the umami bomb I created.
No satisfying ending because my phone died 🙃😬
