Breaking bread is one of the oldest gestures of hospitality in the Eastern Mediterranean. Before a meal begins, before anything is ordered or decided, the table is set with spreads and something warm from the oven. Here, that is this dish.
Hummus, ground smooth from dried chickpeas. Muhammara, a Syrian-rooted red pepper and walnut spread we make with Turkish pepper paste and almond meal. Smoked yogurt. Marinated olives. And our housemade pickles, fermented in-house from seasonal vegetables, bright and sharp and there to cut through the richness of everything beside them. The chubby pita comes on the side, baked to order in the wood-fired oven.

The Artichoke Kebab layers z’hug marinated poached artichoke and spring onions with a green peppercorn tarragon emulsion and a local tombo tuna olive salad. Right now, the green peppercorn emulsion is Chef @sayatozyilmaz ’s favorite sauce, and he especially loves the surprise of white asparagus pickles tucked into the line-caught tuna salad.
Inspired by the flavors of a niçoise and lifted with Aegean touches, the artichoke kebab with a pita makes for a perfect lunch Tuesday through Friday.
