Chef Daniel Berlin remains one of the defining voices in Scandinavia.
He cooks Skåne as if it were a private pantry, fields, forests, and coastline reduced into clarity, and turns it into cooking that is lucid but never thin, restrained but never flat.
It shows the full essence of what is stored there, and still knows exactly when to stop.
By my standards, this is among the strongest craft.
There is also a precision to the cooking over fire that never turns loud, only deeper. Even the way the kitchen treats an ingredient, and often a whole animal, feels aligned with the same idea.
Nothing is wasted, nothing is forced, and nothing is there by accident.
I thought the experience had already reached its peak.
Then I took a bite of his early classic, celeriac, and realized it had another level.
The space is equally powerful. The contrast from the lounge to the main dining room is singular, and you feel the intelligence of the journey designed around it.
And then the service. For a restaurant this remote, it feels almost unreal. Professional, warm, and exact, with a generosity that never performs.
I try to look for flaws, but the fact that the second visit stayed with me more than the first tells me everything.
This is a place that is still growing. It already feels complete, yet its limits are hard to imagine.
I had many incredible experiences this year, but if I had to name one place that defined 2025 for me, it would be Vyn.
To the team behind it, thank you, truly, for the work you do, and for the kind of hospitality that stays long after the meal ends.

2025 was a year I am genuinely grateful for, not only across Europe, but also for the experiences I was able to have in Asia.
Not the most talked about, but the most unforgettable experience for me was Vyn by Chef Daniel Berlin.
It was my second visit, not my first, and that is when it hit. The first visit already set the bar high. The second raised it in a way I did not think was possible.
If you have read my writing for a while, you probably know what I value most—a consistent message.
The space, the hospitality, and the food should speak the same language, so even without long explanations you naturally understand what the place stands for.
In that sense, Vyn in 2025 felt like the ideal form, without trying to impress.
Vyn is not just a restaurant, it is a complete place, a table, a view, and the quiet time around it.
The photos are from 2024, simply because that visit gave me more time to capture a wider range of details.
Out there, in the middle of nowhere, distance is no longer the headline. Direction is.
When a restaurant expresses its direction with clarity and restraint, it becomes incredibly hard to replace that kind of experience with anything else.

🇸🇪 VYN, Sweden - opened by chef Daniel Berlin 2 years ago, VYN was one of the highlights of my life. By the seaside, Daniel opened this 15 rooms hotel, with an already 2 Michelin stars restaurant. There’s no doubt he’s one of the greatest chefs alive. Elegant and humble. Precise and kind. His food is so moving. Sometimes words are not necessary so book your way to the south of Sweden (through Copenhagen) and thank me later (but truly, thank him and his team.) we had this special “bird” game dinner concepted by the facetious Carsten Holler and it was simply unforgettable.

When @d_berlin closed his restaurant in 2020 to care for his family, it felt like a great light had gone out. The news that he would return at the end of 2023, in a new place, stirred real excitement across the food world. Berlin’s reputation rests as much on his culinary mastery as on the integrity and authenticity that have made him one of the most respected figures of his generation.
Now, on a hillside farmstead overlooking the Baltic Sea, @danielberlinrestaurant has quickly become something unique. Within months of opening it was awarded two Michelin stars, and this year it entered The World’s 50 Best Restaurants at No. 47 - an extraordinary recognition so early on.
The experience begins with a string of almost novelistic amuse-bouches - scallop with elderflower and horseradish, brown crab with seaweed and crown dill, grilled tomatoes with wheat and pig cheek, Kalix löjrom with celeriac and pineappleweed, a duck egg with garden greens, and rhubarb with blood, liver and fig leaf. This opening sequence leads into the first dish proper: hot and cold mackerel, the moment when the curtain rises on the main act in the dining room.
Words fail me when I think of the beauty of this restaurant. It was a long-time bucket list dream, and finally making it here was one of the brightest highlights of 2025.
This breakfast was pure magic and maybe the best one of 2025 so far.
Still riding the echo of the night before at @danielberlinrestaurant , where @d_berlin is building a world so emotional, vivid, and exact that it stays with you. There will be much more to say about that extraordinary world, because once you open the door, it reshapes how you feel about everything that follows. @vynfoodandwinebar
