Two years, one hell of a time. Alas, all good things come to an end.
Last Saturday was my final service @sonderkingston and I definitely don't have enough words or pictures to accurately describe the impact working here has had on me.
I can honestly say I put my absolute all into my time here and pushed beyond what I thought myself capable of.
@dani_redtail essentially trusted me with his child and that isn't lost on me. This restaurant is his vision and lifeblood, and especially since we shared experience in the same types of restaurants in the city I knew what was expected, and to be honest there were times I fell short. We never stopped striving for excellence even in those moments. We were a wine bar where I was able to prep, do dishes and cook for 60 covers by myself in the beginning, and we turned into a restaurant with a fully staffed kitchen and restaurant manager when I left. Things we would have conversations about, thinking would never happen came to fruition in ways I dont think either of us could imagine. I started as a part time cook on Sundays and Mondays, and I left as Chef De Cuisine; something I hadn't done up until this point. The faith and trust you had in me will stick with me, I just can't stop pushing 🤣
I'll be forever grateful to the wonderful staff who I've had the the pleasure to work with over the past couple years, to the obstacles we faced and the guests who dined with us night after night.

Very rarely am I happy with my first plate up of a dish. This was an exception.
Gochujang and Dr pepper marinade hanger steak, sunchokes cooked like caramelized onions, roasted and pickled beech mushroom, sunchoke chips and lots of olive oil and fresh squeezed lemon to finish.
