Behind these doors, beer moves slowly. After fermentation begins, much of the beer spends a long time in oak. Months turn into years. Flavours soften, change and settle. There is not much to rush at this stage. The barrels do a lot of the work, and we keep tasting until the beer tells us where it is going. We are George and Charlie. Most of what we do at Crossover is slow. Beer ferments in its own time, barrels change gradually, fruit arrives when the season decides. Our job is not to force the beer into being something it is not. It is to taste, blend, wait, make decisions, and know when something is ready. That is the part people do not always see. Fruit does not wait for us. It arrives when it arrives, and we work with it when it is at its best. That might mean cherries, plums, berries, apricots or something else entirely, depending on the season and what feels right for the beer. The fruit becomes part of the beer slowly. It is not there to cover anything up. This is where a lot of our beers begin. The wort cools overnight in the coolship, exposed to the air around the brewery at Elgoods, Wisbech. We do not add cultured yeast. Fermentation starts from what is naturally present here, which is why each batch is tied to its season and place.
