By chef 🧑‍🍳 👉• @chefitalianochannel ⬇️ How to make ravioli gourmet. 📕 Recipe: White dough: • 200g (7 oz) 00 flour • 86g (3.17 oz) water Black dough: • 100g (3.5 oz) 00 flour • 90g (3.17 oz) egg yolks • 1 tsp activated charcoal powder • 1/2 tsp salt Orange dough: • 100g (3.5 oz) 00 flour • 90g (3.17 oz) egg yolks • 1 tsp anatto powder • 1/2 tsp salt Green spinach dough: • 100g (3.5 oz) 00 flour • 50g (1.7 oz) blanched spinach • 50g (1.7 oz) egg yolks • 1/2 tsp salt Blend the spinach with the egg yolks until smooth, then use 58g (2 oz) of the resulting liquid to make the dough. Golden pasta dough: • 200g (7 oz) 00 flour • 175g (6.17 oz) egg yolks • 1 tsp salt Instructions: 1. Roll out the white dough to 5 mm (0.2 in) thick and the black dough to 1 mm (0.04 in) thick, then stack them on top of each other and cut into strips about 5 mm (0.2 in) thick. 2. Do the same with the orange and green doughs. 3. Place the strips side by side and gently flatten with a rolling pin before rolling out to 1 mm thick. 4. Add the filling and cover with the striped pasta sheet and cut the ravioli. 🔔 Secret tip: let the doughs rest in the fridge overnight before assembling the pattern. The pasta blocks will be easier to slice if they are cold.

You can add this red onion caviar in fish,meat, vegetarian dishes to decorate and give a boost of flavors. 🇮🇹 Questa è una tecnica di cucina molecolare molto facile. Puoi aggiungere questo caviale alla cipolla rossa su piatti di carne, pesce e vegetariani. . 👇🏻Recipe / Ricetta 👇🏻 🇬🇧 • Ingredients: 200 ml water 200 ml white wine vinegar 1/2 sliced red onion 400 ml sunflower oil, cooled in the freezer for 5 hours 👉🏻 Put the water, white wine vinegar and sliced red onions together in a box. Let marinade in the fridge for 1 day. After this time, the pickling liquid will be super pink and full of pickled onions flavor. Filter 200 ml of pickling liquid and add 2.6 grams of agar agar. Whisk well and bring to boil. Cook for 5 minutes. Put the liquid in a kitchen bottle and drop it in cold oil. Wait 3 minutes until the spherification process is done. Filtra 200 ml di liquido di decapaggio e aggiungere 2.6 grammi di agar agar. Mescola bene e porta a bollore. Cuocilo per 5 minuti. Metti il liquido in un biberon da cucina e poi nell’olio freddo.
