Here’s the recipe for our famous Crazy Bastard Kitchen chicken burger
Brine skin-on, deboned chicken thigh in 5% salt water for 2-12 hours
For the coleslaw, thinly slice cabbage, grate carrots and dice white onions. Ratio is 7:2:1. Season to taste with apple cider vinegar and salt
Add sliced cucumbers to apple cider or white wine vinegar and salt to taste. Sugar is optional
CBS Pink Label Chipotle and Pineapple mayonnaise is 2 parts of your favourite mayo to 1 part CBS Pink Label
Make a panné of flour, whisked eggs and panko bread crumbs. Put the drained chicken flesh side down ONLY in the flour, then egg wash, then breadcrumbs. Leave the skin side exposed so that it gets nice and crispy when fried. Fry for 6-8 minutes or until golden
Toast the best burger buns you can find in a pan with butter. Add CBS Pink Label mayo to each bun, a layer of pickles on the bottom, add coleslaw and top with the chicken
