Your favorite casserole made crockpot easy! 🥘 This cheesy, creamy Slow Cooker Neiman Marcus Chicken Casserole is your simple dinner this week. Tap the link in @allrecipes bio to get the recipe or keep reading. ⬇️ Ingredients: 6 slices center-cut bacon 4 cups shredded rotisserie chicken 1 (10.5 ounce) can condensed cream of chicken soup 1 cup sour cream 4 small scallions, thinly sliced, plus more for garnish 1/2 cup slivered almonds 2 teaspoons hot sauce 3 cups shredded cheddar cheese, divided 1 (3 1/2 ounce) sleeve buttery crackers, crushed 1/4 cup unsalted butter, melted Directions: Line a plate with paper towels; arrange bacon in a single layer on the plate. Cover entirely with additional paper towels and microwave on High until cooked through and crispy, 4 to 6 minutes. Chop bacon and place in a large bowl. Add shredded chicken, chicken soup, sour cream, scallions, almonds, hot sauce, and 2 cups cheese to the bowl with bacon. Stir to combine and spread mixture in an even layer in the bottom of a 6-quart slow cooker. Cover and cook until bubbly and browned around edges, about 1 hour, 40 minutes on High or 3 hours on Low. Sprinkle evenly with remaining cheese; cover and continue to cook on High until cheese has melted, 18 to 20 minutes. Meanwhile, stir together crackers and butter in a bowl until evenly coated. Sprinkle evenly on top of casserole; cover and cook on High until warmed through, about 5 minutes. Ingredients: 2 tablespoons olive oil 1 1/2 cups chopped red onion 3/4 cup chopped red bell pepper 1/3 cup chopped celery 1/3 cup chopped, peeled carrot 2 tablespoons minced garlic 1 (1 ounce) package taco seasoning 4 cups reduced-sodium chicken broth 1 1/2 cups picante sauce, such as Pace® 1 1/2 cups roughly crushed yellow corn tortilla chips, plus more for garnish 4 ounces processed cheese, cut into 1/2-inch cubes, such as Velveeta® 3/4 cup heavy cream 1 teaspoon kosher salt 2 3/4 cups shredded cooked chicken 2 tablespoons chopped fresh cilantro, plus more fresh leaves for garnish thinly sliced fresh jalapeno, for garnish (optional) Directions: Heat oil in a large Dutch oven over medium heat until shimmering. Add red onion, bell pepper, celery, and carrot. Cook, stirring often, until softened, about 8 minutes. Add garlic and taco seasoning. Cook, stirring constantly, until fragrant, about 15 seconds. Add broth and picante sauce, scraping bottom to help dissolve any browned bits; bring to a boil over medium-high, then reduce to a simmer over medium-low. Cook, stirring occasionally, until flavors meld, about 10 minutes. Reduce heat to low; stir in tortilla chips, cheese, cream, and salt; cook, stirring constantly until cheese is melted, about 5 minutes. Stir in chicken and cilantro; cook, gently stirring occasionally, until heated through, 1 to 2 minutes. Divide between serving bowls; garnish with jalapeño (if using), tortilla chips, and cilantro.
