Fresh isnât always best.
When coffee comes off the roaster, itâs loaded with COâ that needs time to escape before the flavors really come alive. Rush it, and youâll miss the depth. Thatâs why, even though we nitrogen-seal our coffees to lock in freshness, weâve learned the sweet spot for most coffees are 1â4 weeks off roast and 3-4 weeks for our geshas once the bagâs open. Thatâs when the cup hits its stride.
Like a fine whiskey or a bold red, coffee needs a moment to open up. Fresh isnât âright off roast.â Fresh is finding that perfect window where the flavors peak and the adventureâs in the cup. đď¸

As summer approaches, we begin craving brighter, fruit-forward flavors, and nothing captures that feeling quite like Orchard Thief đâď¸
Built around a peach co-fermented Castillo from Felipe Arcilaâs Santa Monica farm in Colombia, this yearâs blend combines syrupy peach character with a washed Peruvian Caturra and a natural Ethiopia for added florals, sweetness, and balance.
Inspired by Belgian PĂŞche lambic beers, Orchard Thief is juicy, expressive, and especially refreshing iced.
Not every coffee earns the reserve label. The Jardines Java does. This Natural EF2 Java is the result of a fermentation process as precise as it is intentional:
â˘24 hours dry anaerobic
â˘50 hours sealed in GrainPro bags
â˘finished on raised beds
Java is still rare in Colombia and Felipe Arcilaâs approach to it is rarer still. A special Motherâs Day weekend release with extremely limited availability!
Jardines del Eden sits in QuindĂo, Colombia and behind it is a fourth generation farmer who returned home from Australia with a decade of perspective, and a clear vision of what his familyâs land could produce. Felipe Arcila has spent years building Jardines del Eden into one of Colombiaâs most exciting farms, lot by lot and variety by variety. This is our first release from them and it is exactly what we hoped it would be.
The Arcila brothers built their name teaching fermentation to Colombian farmers long before it became the industry conversation it is today. Passing that knowledge to their community freely, harvest after harvest, before ever releasing a coffee of their own. Over years of close contact this relationship has grown into one of the most cherished partnerships we have, and this Java is a reflection of everything he has built.
Yellow plum. Strawberry. Jasmine. Three notes that tell you everything about what Felipe has built â fruit forward, floral, and layered with a depth that lingers. The Jardines Java is a special Motherâs Day weekend release and once itâs gone itâs gone. If youâve been looking for something worth gifting, or keeping for yourself, this is it.

This past weekend we joined Rivian in Denver for the launch of the new R2, serving coffee at their Block Party alongside our partners at Platos Coffee Cart. From early morning pours to a full day of movement and community, it was a chance to bring our shared vision to life.
On bar we featured Sadayana Winey and Sadayana Washedâtwo distinct expressions, both showcasing clarity and depth.
Grateful to be part of the journey and to keep pushing forward with the Rivian team.
