Fresh isn’t always best. When coffee comes off the roaster, it’s loaded with CO₂ that needs time to escape before the flavors really come alive. Rush it, and you’ll miss the depth. That’s why, even though we nitrogen-seal our coffees to lock in freshness, we’ve learned the sweet spot for most coffees are 1–4 weeks off roast and 3-4 weeks for our geshas once the bag’s open. That’s when the cup hits its stride. Like a fine whiskey or a bold red, coffee needs a moment to open up. This is our first release from them and it is exactly what we hoped it would be. The Arcila brothers built their name teaching fermentation to Colombian farmers long before it became the industry conversation it is today. Passing that knowledge to their community freely, harvest after harvest, before ever releasing a coffee of their own. Built for moments like this🔸 This past weekend we joined Rivian in Denver for the launch of the new R2, serving coffee at their Block Party alongside our partners at Platos Coffee Cart. From early morning pours to a full day of movement and community, it was a chance to bring our shared vision to life. On bar we featured Sadayana Winey and Sadayana Washed—two distinct expressions, both showcasing clarity and depth. Grateful to be part of the journey and to keep pushing forward with the Rivian team.
