Happy 40th birthday to our much adored and always smiling Pablo! š Pablo is from Chile and has been working with us for 4 years. He loves playing the bass, listening to music and football. Heās also a big westlife fan ! ā„ļø
Many of you will likely recognise Margaret, who has been working here since 1993! Sheās in charge of all the rosters; juggling the ins and outs of everyoneās schedules, travels and projects. Itās not an easy job, but she executes it with such grace. You may not know this but she has also developed some of our favourites like the overnight oats and the different bagels we offer.

Picking up where we left off in the late 1980s! After a few years the whole foods shop and cafe Neil had the idea to turn Cornucopia into a restaurant.
Unfortunately his untimely passing to pancreatic cancer left Deirdre to run the restaurant on her own. But thanks to her devoted team, and her resilience to never give up, Cornucopia is still here for all of us to enjoy today.
You may notice the āPeaceā signs on the front page which was the staff protesting the invasion of Iraq. Our values have always been a driving force behind Cornucopia and always will be.

Paddy and DairĆne are second cousins, and have grown up really close. Paddy is the third of his siblings to work in Cornucopia, with Eoin and Caitriona coming before him.
Paddy has won numerous medals for bowling in the special Olympics, and has turned his skills to Cornucopia in the recent years keeping the tables clean and organised - he is so loved by all his coworkers.
DairĆne, the managing director is thrilled that now that her mother Deirdre has retired, Paddy is keeping the family in family business for Cornucopia.

Itās our 40th birthday this year! To celebrate, we are looking back at the story thus far, starting with Part 1: when Neil and Deirdre first met.
