When tomatoes are cheap, do yourself a favour and make a bulk batch of roasted tomatoes with onion, garlic, olive oil, salt and pepper. Keep it chunky or blitz to a smooth sauce. So good for pasta, add to meatballs, turn into soup or just smoosh onto bread. One of my fave summer batch cooks for the week ahead. If you’re looking to boost the nutrients in your salads, and something to keep you full and energised, these marinated lentils are it! Full of fibre and a great source of vegetarian protein and iron, they are garlicky, tangy and oh-so moreish.
I love adding them to salads with charred broccoli or roast veg, or combining them with brown rice or quinoa, lots of fresh herbs and goats cheese for a filling, grainy salad that’s also a complete protein - big win!

Lately I’ve been learning about the importance of prebiotics for gut health, and I had no idea asparagus was on the list! One of my favourite ways to eat it is raw, thinly sliced in a salad, and this miso dressing makes it even more of a winner. Whisk miso with a little hot water, rice wine vinegar, and sesame oil, then toss in greens and sprinkle with sesame seeds. Yum and good for your gut!
