From dhal, carrot sambol, eggplant, moju and mango, to green beans, cabbage, mallum, potato cutlets and papadams… this was one of the most authentic vegetarian spreads we had during our trip.

An early morning at Negombo Fishery Market collecting fresh lagoon crabs, lagoon prawns, and the catch of the day straight from the source.
From walking through the market ourselves to taking the ingredients directly to the chef this was all about experiencing how authentic Sri Lankan seafood should really taste.

Today we visited the local fish markets in Negombo to see how Sri Lankan dried fish is traditionally prepared.
From cleaning the fish, to soaking it in salt water for days, and finally drying it under the sun for over a week — this process helps preserve it for up to a year.
For many Sri Lankans, dried fish isn’t just food. It’s culture, nostalgia, and a staple side dish that’s been part of rice & curry meals for generations.
What most people don’t realise is that it’s also a huge export industry back home too 👀
