@matzomimi is down for weird looking dishes of cucumbers slowly grilled over coals with a cucumber/tomato water sauce, pepitas & pumpkin seed oil. Her astute palate pointed out that the sauce nicely balanced umami and acidity from white balsamic vinegar; she also noted that without the garum, this dish is vegan. Almost only counts in horseshoes and hand grenades though, Mimi. Oh, and thank you @altarestaurant for the herbs!!
Potato Pavé: French for “paving stones” named as such for the shingled layers much like a scalloped potato dish. This gets a little extra care cut to order, seared and basted. Week 1 @perlmans_
