A day at the farm 🌱☕️ The CMCR team headed to Khun Lao to explore @jaroon_khunlaocoffee and experience the craft behind every bean.
1. P’Jaroon guided us around his coffee farm, showing the different varietal cherries he has been producing.
2. Only ripe, deep-red cherries are carefully handpicked.
3. After harvesting, the cherries are hand-sorted to remove defective, pest-damaged or unripe cherries, ensuring consistent quality in every batch.
4. Ripe cherries will then be fed into the coffee pulper machine, which separates the cherries from the beans.
5. Cherries that are unripe or too firm can’t be depulped properly, so they stay whole and are automatically sorted by the machine.
6. After depulping, the coffee cherry skins are separated and dried. These dried skins, called cascara, are often sold as a tea-like product with fruity, floral notes.
7. P’Jaroon has built controlled drying rooms to carefully manage temperature, humidity and airflow, ensuring high-quality beans while reducing the risk of defects or off-flavors caused by rain, pests, or fluctuating weather.
8. A sneak preview of P’Jaroon’s next batch of fermentation-processed coffees.

Earlier this March, our roastery team travelled to Mae Chedi, Chiang Mai, getting closer to where it all begins.
Together with our friends at @beanspirecoffee , we were guided through the coffee farm, following the process on the ground and gaining a deeper understanding what happens before the beans reach our roastery. From harvesting to drying, every step is intentional.
It’s these relationships and shared practices that shape the coffees we roast and the stories we serve.
