One of the things we noticed spending time at COLOR, the bakery isn’t separate from the coffee. Same care, same intention, same community showing up in a different form. Honestly one of our favorite parts of the whole visit.
Becky leads it. Grew up on a small family farm where making food from scratch was just how things worked, spent five years going from dishwasher to manager at a local bakery, then went to culinary school because she wanted to understand the why behind what she was already doing. She found COLOR because she wanted something smaller, something personal, somewhere she could serve the people around her. Now she mills Colorado grains daily, shapes naturally leavened loaves, and bakes pastries for the same people who come in for their morning coffee.
MJ grew up right here in Eagle County. Started at COLOR part-time in high school and every shift she’d watch the sourdough come out of the oven, the smell, the crust, the way Becky moved through the kitchen. Eventually she asked to learn. Stepped into baking full-time after graduation by fall 2025 and she’s heading to Fort Collins soon to continue her education.
Walking into the back of COLOR you get hit with warm butter and fresh milled grain before your eyes even adjust. The pastries are some of the best we’ve ever had.
We got to spend time with them and this carousel is a small look at the people behind COLOR’s incredible bakery. 🥐

How long should I rest my coffee?
Color gets better.
Filter: 3.5–6 weeks
Espresso: 4–6 weeks
Early = bright + wild
Middle = balanced + round
Late = soft + polished
We like the middle sometimes, and we like late sometimes. I had a 2.5 month old cup of Peru yesterday that was stunning.
The whole curve is worth tasting.

Clean washed coffee with a bright structure and a juicy finish. This is a hit for lovers of washed coffee. A little extra zip from the fermentation magic, but this really hits clean with flavors of apple, red fruit leather, and lemon cake with a brown sugar note as well.
Orlando Rosillo in Ecuador continues to push quality boundaries with extended fermentation that adds complexity without sacrificing clean cup vibes. A mega-delicious finish to the Ecuadorian season. Beautiful photography by our pal @jackgarland lights the way on the label.
