#Repost @dxbalfaone with @use.repost ・・・ ‎قهوة الشيخ زايد -رحمه الله: ‎«أَنا قَهْوَتِي غيْرْ عن الرَّبْع… وَما أحِبّها بِحَبِّ الهال أَبَد» ‎هكَذا كانَ يَقُولُ الشَّيخُ زايِد، طَيَّبَ اللهُ ثَراهُ حِينَ يَتَحَدَّثُ عَن فِنْجانِهِ الَّذي لا يُشْبِهُ فِنْجانَ أَحَدٍ ‎عَلَّمَ المَقْهَوِيُّ الأَوَّلُ أَدَقَّ أَسْرارِ القَهْوَةِ العَرَبِيَّةِ ‎مِنِ اخْتِيارِ البُنِّ البرازِيلِيِّ الأَجْوَدِ، إِلى تَنْقِيَتِهِ وَتَنْظِيفِهِ، ثُمَّ حَمْسِهِ عَلَى الحَطَبِ لا عَلَى الغَازِ، فَالنَّارُ لَها طَعْمُها وَرائِحَتُها في القَهْوَةِ . ‎وَكانَ يَقُولُ: لِكُلِّ فِنْجانِ بُنٍّ… لِتْرانِ مِنَ الماءِ مِعْيارٌ خاصٌّ لا يَعْرِفُهُ كَثِيرونَ . ‎بَعْدَ الحَمْسِ، تُبَرَّدُ القَهْوَةُ بِالمُبَرَّادَةِ ، ثُمَّ تُطْحَنُ بِالنَّجْرِ، وَتُغْلَى عِشْرِينَ دَقيقَةً مَعَ الزَّعْفَرانِ وَماءِ الوَرْدِ وَالقَرَنْفُلِ وَالشَّمْطَرِي ، لِتُصْبِحَ نَكْهَتُها عَطِرَةً لا تُنْسَى . ‎الشَّيخُ زايِد رَحِمَهُ اللهُ، كانَ يُفَضِّلُ القَهْوَةَ بِلا هالٍ، فَقَد نَصَحَهُ الأَطِبّاءُ بِالابْتِعادِ عَنْهُ، وَكانَ يَقُولُ: إِنَّ القَهْوَةَ لا تَحْتاجُ أَكْثَرَ مِنْ طِيبِها الطَّبِيعِيِّ. ‎طُقوسُهُ مَعَ القَهْوَةِ لَمْ تَتَغَيَّرْ، إِلّا في رَمَضانَ وَأَعْباءِ السِّياسَةِ ‎بَعْدَ صَلاةِ الفَجْرِ، يَشْرَبُ فِنْجانَيْنِ لا يَزِيدُ عَلَيْهِما ، وَلا يَعُودُ إِلَيْها إِلّا وَقْتَ الظُّهْرِ، وَرُبَّما فِنْجانًا إِكْرامًا لِضَيْفٍ. ‎وَكانَ يُحِبُّ القَهْوَةَ مَعَ التَّمْرِ أَوْ قُرْصِ التَّمْرِ المَصْنوعِ مِنَ التَّمْرِ وَالخُبْزِ الطَّازِجِ ‎وَكانَ فِنْجانُهُ كَبِيرَ الحَجْمِ، كَما فَناجِينُ الضُّيُوف، يُصِرُّ عَلَى أَنْ تَبْقَى كَما كانَتْ في زَمَنِ الآباءِ وَالأَجْدادِ قائِلًا: «ما أَوَدِّرْ عاداتِ الزَّمانِ الأَوَّلِ» . ‎وَبَعْدَ القَهْوَةِ، يَأْمُرُ بِالحَلِيبِ مَعَ الحِلْبَةِ وَالعَسَلِ وَالزَّنْجَبِيلِ … وَصْفَةٍ يَوْمِيَّةٍ يَرَى فِيها غِذاءً وَشِفاءً وَيُقَدِّمُها لِضُيُوفِهِ كَما يَشْرَبُها بِنَفْسِهِ . ‎لَمْ يَكُنْ يُحِبُّ الشّايَ، بَلْ يُفَضِّلُ الزَّعْتَرَ وَالقِرْفَةَ ، وَكانَ يَقُولُ: «الزَّعْتَرُ أَنْفَعُ وَأَطْيَبُ» ‎هكَذا كانَتْ جَلْسَةُ زايِدٍ مَعَ فِنْجانِهِ… ‎فِنْجانٌ يُرْوَى مِنهُ التَّاريخُ … وَتُسْقَى مِنهُ القِيَم.

“القَهْوَةُ… رَفِيقَةُ الثَّقَافَةِ وَالقِرَاءَةِ” القَهْوَةُ… ☕ لَيْسَتْ مُجَرَّدَ مَشْرُوبٍ يُوقِظُ الحَوَاسَّ… بَلْ طَقْسٌ ثَقَافِيٌّ يُعِيدُ تَرْتِيبَ الأَفْكَارِ وَيُهَيِّئُ الرُّوحَ لِلمَعْرِفَةِ. فِي كُلِّ زَاوِيَةٍ مِنَ العَالَمِ، هُنَاكَ فِنْجَانُ قَهْوَةٍ يَنْتَظِرُ قَارِئًا، وَكَأَنَّ بَيْنَهُمَا عَهْدًا قَدِيمًا لَا يَنْكَسِرُ. ☕📖 فِي المَقَاهِي وَبُيُوتِ الأُدَبَاءِ، كَانَتِ القَهْوَةُ دَائِمًا شَاهِدَةً عَلَى مِيلَادِ فِكْرَةٍ، أَوْ نِقَاشٍ فَلْسَفِيٍّ، أَوْ سَطْرٍ جَدِيدٍ فِي كِتَابٍ. هِيَ لَحْظَةُ صَمْتٍ وَتَأَمُّلٍ، تَجْمَعُ بَيْنَ رَائِحَةِ البُنِّ وَصَوْتِ الصَّفَحَاتِ، بَيْنَ دِفْءِ الفِنْجَانِ وَحَرَارَةِ الفِكْرَةِ. تُرَافِقُ القَهْوَةُ المُبْدِعِينَ، تُصْغِي لَهُمْ، وَتَمْنَحُهُمْ مَسَاحَةً لِلتَّرْكِيزِ وَالخَيَالِ. وَمِنْ رَائِحَتِهَا تَنْبَعِثُ قِصَصُ المُدُنِ، وَذَاكِرَةُ النَّاسِ، وَمَلَامِحُ الصَّبَاحَاتِ الأُولَى. ☀️ القَهْوَةُ… لَيْسَتْ عَادَةً… إِنَّهَا ثَقَافَةٌ، وَرَفِيقَةُ القِرَاءَةِ، وَسِرٌّ صَغِيرٌ فِي حَيَاةِ كُلِّ مَنْ يَبْحَثُ عَنِ المَعْنَى بَيْنَ السُّطُورِ.
