A few weeks ago, I heard someone describe my newest project, @therumsofmexico as “from the guy behind 5 Sentidos.” It’s not wrong—but it made me pause and think about the common thread behind all the projects I have been working on for the past decade.
And at the center of it all is a simple idea: I work with spirits that are deeply, unmistakably human. Spirits made by people whose identities are inseparable from what they produce. Spirits learned not in courses, but in communities, from families, through generations of culture and practice. Spirits that their makers were born to create. Irreplicable, of singular origin.

Thanks to our friends at @thebeveragecollective , the first expressions of Alambique Serrano and Cañada have just landed in Canada.
Our initial offering is virtually a walk through time. At a still stregth 54%, Cañada is the rum that is the genesis for Alambique Serrano. This particular batch is profoundly punchy, with notes of apple cider, sweet cinnamon and dried figs. It sings in a daiquiri and dances disco in a Ti Punch.
Next up is a single cask of aged Cañada, Single Cask #7 to be exact. Aged just under two years in an ex-bourbon barrel, and then rested an additional 2.5 years in glass, the notes of caramel, vanilla and orange peel make it perfect for a Rum Old Fashioned.
If you are looking for something with a little more age, the 2nd Edition of 3 Años is a blend Pot and Krassel Still rums that have have spent a minimum of three years in New French Oak and ex-bourbon casks. It is bright, tropical and fruity, and it would do you no harm to enjoy it straight up or on a small rock.
For the rum nerds, we have the global premiere of Besadiablos - a blend of ex-bourbon, new french oak, new Hungarian oak, and ex-red wine casks that held either Krassel Still Rum or Pot Still Rum for anywhere to 19 to 39 months. To add a bit of zing to the mix, we threw some high ester rum in to the blend, and result is a remarkably potent yet nimble rum with dozens of layers to unpack.
And lastly, for the hazmat crew, we shipped up a few cases of the beloved Cartier 30. This batch came off the still at a lovely 69%, and like the finer things in life, it is best enjoyed in small doses (or in a Nuclear Daiquiri)
Organically-grown, hand-harvested “Java” sugarcane. In Tlalixtac, this grass takes between 16 and 24 months to reach maturity, depending on altitude and soil type. Thanks to its sturdy roots and overall heartiness, “Java” is particularly well-suited for the steep hills of the Cañada.

Produced in the cloud forests of Northern Oaxaca, Cañada is an "aguardiente " - the local term prescribed to spirits distilled from sugarcane juice.
The cane is milled on site, and the juice is piped down to fermentation tanks at the distillery, where native yeasts get the juice popping.
