This is Shohel, my assistant and team mate for the past month. Last year he was the kitchen porter and now he is working on the cold section with the discipline and organisation that many professionals would desire to have. Without clear understanding of Greek or the ability to read orders he trusted me to guide him through the mayhem and not only we survived, we did it with class and style. Cheers to this dude for his hard work and no bullshit attitude.

This is a bowl of greek tripe soup aka “patsas”. It has helped many generations to cure the evils of hangover thus it has provided a safety net on the pursue of an endless conversation, a love affair or a better version of an evening. Patsas should be identified and celebrated as an element of human engineering that served the purpose of zero waste (before it was cool) while giving people the chance to be more childish and celebrate life.
