Des rillettes toute l’année !
I think this dish is definitely a big classic French childhood memory.
It’s super easy to prepare, quite affordable in comparison to any fish dish and honestly I have never found anyone who didn’t just love it.
We choose fresh and smoked mackerel here but the recipe is super versatile and any fish can be used.
For a big batch :
1 smoked mackerel
2 fresh mackerel bake in the oven
3 shallots, chopped finely
A big bouquet of dill (I love when it’s super green)
One big bio lemon for zest and juice
2 large spoons of fermented mustard or classic grains mustard (not the German sweet one !)
3 large spoons of Schmand, to adjust depending on the consistency you want to get
3 green onion chopped
Chilli flakes optional
Salt and pepper
Fresh bread to serve with

It has probably been the most challenging things I have ever done, as I’ve never owed my own kitchen before or never had a mentor to teach me how to do things but I’m just sooo amazed by all of the positive return and the fun I can get every day !

It’s a wrap !
2025 ended and we decided to look back, with a tiny bit of delay, at everything which made Clamsy what Clamsy is now.
This project started on Emma’s couch after a party, when we realised how connected we were, emotionally and professionally, it was an absolute evidence we would create something together.
We spend weeks and weeks, elaboration menus, cooking, testing, laughing, crashing, eating, all of that together and more and more. Until our first pop up, until we got more than a project a month, until we realised it was a bit too intense and decided to slow down to start again in 2026 in a very mindful way.
But it’s honestly not only food that we saw when we scrolled down the thousands of the pictures we took over the past months. We saw all of our friends being there to support us every time, we saw all of the passionate food people we collaborated with and furthermore the whole community which organically got created around us.
I cannot be more grateful for everything we experienced this year and I’m so excited to see what comes next !

We have been quite absent since Emma got her knee surgery and honestly we couldn’t wait for us to feed you again. This is why we worked on that spicy project meanwhile, so you can delight yourself in another way.

this is how holidays with two fishmongers looks like : getting freshly caught fish directly from the fishermen, packing our best gears, some olive oil and fleur de sel from @epicerielideal and eat it straight on the beach (yes we ate it on the beer package)

IT’S MUSHROOM SEASON 🍄🍄- 2ND EDITION
Once again we reunited the best mushroom hunters crew ever for a successful fight in the dangerous forest of Brandenburg.
Extra stop on the way to enjoy the delicacies @_mout_ and I collected on our last adventures.
Tomorrow, for our dear hungry Loophole fam, we will be making some sandwiches at 90mil for the last Loophole party ever
This event is a very special one as one of us has been (and still is) a Looper for now many years
So happy to have this opportunity to be part of an event celebrating the end of an era but also the beginning of a new chapter. Loophole has been such an important part of Berlin underground live and culture, an opportunity for everyone to perform and to be free. It will forever be missed.
Come laugh, get a last dance with us and also come enjoy our special fishy (and vegan) sandwiches, directly inspired from a South of France recipe : the Pan Bagnat.

2024 appeared to be the best year of my life. ✨
So grateful to have met @electron.libre and started the clumsiest adventure possible full of laughs, sticky fish fingers, stains and food dropped on the floor, morning hangovers and brilliant ideas, food and even more food.
This connection pushes me to be a better version of myself every days, to rethink the limits of my creativity, to be brave and fearless, to happily turn myself toward a future that I always thought would be scary and uncertain.
I’m just so proud of that duo we created. 🦪✨
