sauce no. 2: the beurre blanc.
straight to the sauce:
supposedly the original was created by chance, through the accidental omission of an egg yolk in what was meant to be a béarnaise.
ours, on the other hand, came about through the deliberate omission of dairy butter. it’s less rich (still very), with a little edge from our fermented cultured gold and @clearspringuk ’s barley miso.
Recipe:
Beurre Blanc & Blanched Asparagus
Reduce 50ml white wine vinegar and 150ml white wine with a finely diced shallot and 1 tbsp clearspring barley miso until slightly syrupy. Strain.
Over low heat, gradually whisk in 200g cold cultured gold until emulsified. Keep warm, don’t boil.
Blanch asparagus in well-salted boiling water for 2–3 minutes until tender, then drain.
Serve the asparagus with the beurre blanc spooned over.

Matcha workshop 🍵🫶🏾
I had the privilege of co-hosting a beautiful fundraising workshop with @soulsandsolescio in support of TAPCCO (Tesfa Addis Parents Childhood Cancer Organisation), teaching guests how to prepare and enjoy matcha together.
It was such a meaningful experience bringing people into a moment of calm, connection, and learning, all for a cause ❤️. And a huge thank you to @clearspringuk for providing their variety of matcha powder and supplies to support this endeavour🫶🏾.

Let’s make Viral Tofu Chocolate Mousse at home! Silken tofu, melted dark chocolate, maple syrup and a pinch of sweet white miso.
Blended until silky, chilled for an hour. A delicious dessert that nobody will ever guess is tofu.
We made it in the @kitchenaid_uk Go Cordless. As it’s cordless you can make it anywhere in the kitchen we used the chopper as it blends as well as the blender.
