I really enjoy teaching the culinary students in their Baking & Pastry class @ciagreystone . Exposing them to new dishes, techniques and perspectives. They are often intimidated by the precision of pastry but I think it’s equally important for them to exercise their creativity. With flavors as much as form.

Congratulations to my colleague Dan Kedan, Farmer Nick, and the staff and faculty of @ciagreystone for a successful, engaging, and educational Farm to Table event this afternoon. It was a great turnout. The students prepared everything from non-alcoholic beverages, chicken sandwiches and chicken liver tartlets from birds they raised and harvested themselves, beautiful chocolates with posters on the bean-to-bar experience, and more. There is an abundant amount of fruit, produce, and herbs grown onsite, giving our students a truly one-of-a-kind, holistic, farm to table experience.
Our 4th of July BBQ at the Culinary Institute of America features local, sustainably raised meats, prepared by our Farm-to-Table students. Honoring American flavors and local farmers—because good food starts at home. ❤️🤍💙
