Back to pine shoots, though! Now that our A la Carte menu is coming along, we can see where those forest goodies are being used... The pine shoots we have collected will be pickled and served with fish as a condiment to add acidity 🐟. Some of them will be dried out on a bed of salt and added to our table salt 🧂. Chef Andrius is now taming a new technique and working on a new recipe for baking fish in a Rose 🌹 blossom brine! To find out how that works out, you'll have to come and visit us
