I've spent nearly 5 weeks in self-isolation 🤯 And all that time while I was away, my partner in crime @kubilio was running the show @14horses_restaurant on his own – covering both the kitchen and the front of house 🤹‍♂️ Today, as he's enjoying his well deserved rest, it's my time to sweat and cover for him. And it's no small feat, given his level of standards – but I'm excited to take on the challenge! 🎉We're nearing the finish line @senatoriupasazas now and getting ready to welcome everyone to the best-kept secret in Vilnius! 😱As an eclectic collection of restaurants, bars, shops and other soon-to-be favourite destinations, our vision is all about blending culinary, shopping and entertainment experiences to create a new urban standard! This means the entire place has to work like a well-tuned orchestra 🎻🎺.. With the objective to make sustainable living a more accessible option for everyone, we're also working very hard to make sure we're not missing out on all-time classics. Here's an example I love to share 👇 At #Grudas, our new bakery, we'll be baking beautiful French baguettes 🥖(seriously, the best Vilnius has seen so far!). @14horses_restaurant , @kubilio will make a kick-ass butter. Then @chef_rokas at Muu, our organic butcher shop, will top it all up with a mouthwateringly good Parisian-style ham... And that's my friends what I call the French dream in Lithuania!!! 33% of #lithuania is covered by forests (thanks Wiki this time 😉 ), so it's not THAT unusual to find a Chef wandering about the woods, feeling at home like a fish in a lake (or is it?). BTW, 1.5% of the country is covered by lakes! 😱. Here's another story that again starts in the early hours of the morning... This time, it's our chef at @14horses_restaurant @kubilio , taking me along to collect pine shoots 🌲. Don't ask me why yet – I had no clue at that time! But I would soon find out... I knew that @kubilio was mastering the art of sourcing local products and natural ingredients. Learning how to use them at the time when mother nature has them in abundance. Whether products from our @farmerscircle or from the nature around us. For the best stuff, you often need to go off-road or wake up early... It seems that foraging is becoming a national sport here in #vilnius so the best spots are worth fighting for! Back to pine shoots, though! Now that our A la Carte menu is coming along, we can see where those forest goodies are being used... The pine shoots we have collected will be pickled and served with fish as a condiment to add acidity 🐟. Some of them will be dried out on a bed of salt and added to our table salt 🧂. Chef Andrius is now taming a new technique and working on a new recipe for baking fish in a Rose 🌹 blossom brine! Did you know that there are over 25 species of the elder plant around the world? (I didn't – thanks, Google). But I know how lucky we are at @14horses_restaurant that one #elderflower species is thriving in the wild around Vilnius. The day was just breaking (fine, it was 8 am), when @laukaitissimonas took me on a little foraging trip to handpick elderflower blossoms – right before the bees could come and pick the beautiful pollen. We've collected bags and bags of this awesome plant. Then, with a bit of magic in the kitchen, we've turned this natural beauty into a tasty cordial that can be kept for week. With a few ice cubes and a splash of sparkling water, it makes the most refreshing summer lemonade 🍋 And that's the simple art of using and preserving products around us to enjoy the ripeness of seasonality even when the blooming season is over. Mushroom season is open in #lietuva🇱🇹 🔥 But no need to go into the forest, cause we’re bringing the forest to @14horses_brasserie !Kicking off the week with a new #lunchmenu featuring lip-smackingly good mushroom soup & other #baltic delicacies. As is becoming a tradition, @floristaiantribos has also matched the bouquet to the menu (ever seen mushrooms in a vase 😦?). And to finish on a summery note, you may want to try the pear and thyme homemade lemonade... don’t mind Mondays in #vilniusoldtown #govilnius one bit! 😍

The best thing about our flower arrangements @14horses_brasserie ? They’re (kind of) eatable! They’re matched to our menu, which changes every week, to include closer-to-table flowers and plants like the poppies in this picture. 🌱 ☘🌾😍 @floristaiantribos
